Ab - Dough - Khiyar… It means Water - Yogurt & water Mix (A Persian Traditional Drink) - Cucumber. This is a summer special Persian dish which is served cold aiming to cool you down in hot days of summer. In ancient time in Iran, where there were no modern coolers, ACs & fans, people used to make this delicacy to cool themselves, specially in the noon time. It can be served even as a main course for lunch but it is not common to have it in the night. I can’t tell you how making it is simple and tasting it is ultimate and of course a sweet nap afterwards under the shadows of the garden tree on a wooden bed is heavenly.
