Hey guys, it's Dani, and today I have a recipe as per your request.
You have all been asking me for some make-ahead breakfast ideas, so today I'm showing you
how to make veggie-packed, freezer-friendly egg sammies.
These sandwiches are so good, and they could not be any easier to make, and they're super
convenient once you get rolling into a busy week.
Mmm.
Mmm!
So, the first thing you want to do is preheat your oven to 350 degrees Fahrenheit, and then
I also have a small baking dish, I'm using an 8x9 baking dish, that I'm just going to
spray down with a little bit of cooking spray.
You could also rub it with a little coconut oil or butter, so just make it work for you
with whatever ingredients you have on hand.
Next I have a nice big non-stick cooking pan heating up over a medium heat.
I'm going to heat just a little bit of olive oil in the pan, and once that is heated through,
I'm going to add in my onion.
I have half of a chopped onion here, and you want to make sure that when the onion gets
into the pan, they start to sizzle.
That's how you're going to know that your oil is hot enough.
Give the onion a little sprinkle of salt, mix it around, and you're just going to let
this go for about three, four minutes until the onion begins to turn translucent.
From here, I'm going to add in two chopped bell peppers.
You could certainly use one color, but I love using two different colors because it just
makes the dish that much more bright and beautiful and fun to eat.
So I'm using a yellow pepper and an orange pepper, and then I have two cloves of chopped
garlic.
A little bit more salt, a little bit of black pepper, and then gently stir this all around
the pan.
Now I like to just let this go for about two minutes or so because I don't want the veggies
to get mushy.
I still want them to have a little bit of integrity with them.
So as soon as they just get that raw edge off of them, I add in eight ounces of chopped
up baby spinach.
And guys, I got this baby spinach right from the pre-washed containers.
It makes it super easy to do.
Just grab a few handfuls and give it a rough chop.
Stir this around, and I literally just let this cook until the spinach wilts down, which
you will see won't take long at all.
So once the spinach has wilted down, shut the pan off.
And then I just like to let the veggies sit in the pan for a few minutes just so they
can cool down a bit.
In the meantime, I'm going to crack six eggs into a nice big bowl and then gently whisk
those together.
Slowly begin to transfer the veggie mixture into your eggs.
If the veggies are still warm, do this just a little bit at a time.
This way you can temper the eggs and we don't end up having the warm veggies scramble our
eggs.
So if you do a little at a time, you will avoid that.
Get it all in there.
Mix that together.
How beautiful is that?
I just love all the different colors.
It just makes it that much more fun and exciting to eat, in my humble opinion.
Then I'm just going to transfer this all into that dish that we sprayed down at the beginning.
And this whole thing is going into that 350 degree oven, Fahrenheit, for 30 minutes or
until it is cooked and set through the center.
Now I don't know about you guys, but I am always trying to find fun, creative ways to
work more veggies onto my plate.
And to me, sticking them in an egg sandwich is kind of unexpected, but it also makes the
Sammy extra delicious.
It gives it great flavor and great texture.
And don't think that you need to stick to the script, right?
I'm doing the onions and the peppers and the spinach, but you could use any vegetable that
you like or that you get excited about that is in season and super appealing to you.
So you could be doing zucchini, tomatoes, mushrooms.
They all would work.
Broccoli.
So pick what you have, pick what you love, and have some fun with it.
Once the eggs are done, I'm just going to let them cool down a bit.
And then once they're warm enough to handle, I just cut them straight down the middle vertically
and then across two times horizontally so that I make six squares.
And over here, I've got six English muffins.
You can use any type of English muffin you like.
Personally, I really love the sprouted grain English muffins.
I will link down to my favorites down in the description box below if you want to see them.
So I open up all the muffins, have them laid out, ready to go.
We have like a little assembly line going here.
Then I'm just going to take one of the egg squares, place it on top of the muffin, and
repeat until we've got them all laid out.
And then I top each egg with a slice of cheese.
I am using a beautiful grass-fed cheddar cheese, but you can use any type of cheese you have
or you love.
Again, do something that's going to turn you on, light you up, and get you excited.
And then of course, I'm going to go back and pop the lids on each of these sammies.
So from here, all I'm going to do is wrap each sandwich up in a piece of plastic wrap.
So I just place the sandwich in the middle, fold the wrap over the top, and then I kind
of fold the sides like you do when you're wrapping a present.
The idea is just to get all the air out as you can and then fold it down around the bottom.
And then I like to just kind of go through it with my hands, flatten it out, make sure
as much excess air that I can get out, I get out, and I'm on my merry way to wrap up the
next sandwich.
Do that with all six sandwiches, and these are ready to pop into your freezer.
Now, a couple of tips for you.
If you're going to be eating them within the week, you could also just leave them in your
refrigerator and then heat and go.
If you're going to put them in the freezer, that totally works too, but then I do find
the best way to heat them up is to either take them out the night before and leave them
in the fridge, or take them out, you know, 10-15 minutes and leave them on the counter
before you unwrap them and then pop them in the microwave.
They take anywhere between one and a half to two and a half minutes in the microwave
depending on how cold or frozen they are, and you just want to make sure that you heat
them until they're heated all the way through the center.
I am telling you guys, this is a super easy, absolutely delicious grab-and-go breakfast
that will keep you satiated and satisfied for hours.
Mmm!
I love how hearty, yet light and fresh these muffins are, especially coming right from
the freezer.
You have got to give this recipe a try.
