Hello YouTube.
Have you been nutty or have you been nice?
This is our festive burger salad.
It's basically a play on nut loaf.
We've got pecans, walnuts, dried cranberry, raisins, got some fresh pomegranates which
are in season right now and they're going to pop with that freshness which is delicious.
Brighten it all off with some parsley, some fresh chives, a little bit of olive oil, salt
and pepper.
It's simple.
It's a great salad to have on the table on Christmas Day.
It's a great salad to make on any day.
This is how we make it in the restaurants.
A cup of burger.
We're going to go in with a stock cube, two cups, one and two.
Get your cling film, seal all that heat in.
Now burger is going to absorb all that water and just puff up.
It's going to take about 20 minutes to cook.
So as we're doing that, we're going to toast off our nuts.
We want to get a nice little light toasting.
Walnuts, they burn pretty easily.
Pecans, they burn pretty easily.
Just brings out their flavour just ever so slightly.
Pecans, walnuts, you can do this on a pan, you can put it into the oven and just roast
it gently.
It makes a difference in flavour.
And we're just going to run the knife through.
Burger has been cooked, all the liquid has been absorbed so we can remove the cling film,
fluff it up.
We've got a lot of burger and I've got some components that I want to put in here.
So I'm going to get a bigger bowl and go in with our burger.
We've got our cranberries, some raisins, chopped pecan and walnuts, parsley, chives and then
pomegranates.
It's going to add that lovely fresh pop of juicy pomegranate flavour.
Send a nice bit of fresh lemon, a bit of olive oil, a nice pinch of sea salt, a nice pinch
of black pepper.
What's left to do is give it a good mix.
So that's kind of it.
It's just a great big grain salad.
Christmas time can be so heavy.
Everyone wants to have all these rich vegetables cooked in butter and I'm all for indulging
in good food.
But sometimes having a nice fresh salad on the table actually makes the whole thing,
the whole experience that much nicer.
So, great thing to have on the table when everybody's serving themselves a Christmas
dinner.
You can go like that.
You can get a little bit of the good olive oil and give it a little bit of that.
It's just a lovely little platter to have alongside Christmas dinner.
And thanks for stopping by.
