Ingredients:
1kg beef shank or beef brisket
2 large carrots
4 large potatoes
To wash the beef:
1Tbs wine
2Tbs tapioca flour
20gr minced garlic
20gr minced shallots
10gr minced ginger
Marinade:
1/2Tbs curry powder (or tumeric)
1/2Tbs five herbs powder (Deer brand)
1/2-1Tbs chili powder
1Tbs annatto oil
1Tbs oyster sauce (or 1/3 Tbs salt)
2Tbs tomato paste
10gr minced garlic
10gr minced shallots
5gr minced ginger
1Tbs cooking wine (optional)
To stir/braise the beef:
10gr minced garlic
10gr minced shallots
5gr minced ginger
1/4 pineapple with 100ml water (optional)
For broth base:
2 star anise
2 cinnamon
100gr lemongrass
300-400gr onion
1liter coconut juice
1liter water
Seasoning:
1gr unrefined salt
20gr chicken broth
20gr sugar
1Tbs oyster sauce
Before serving:
2Tbs cornstarch with 100ml water
2Tbs heavy cream
