FOR SOUP BASE:
50gr minced lemongrass
100gr pineapple
25gr galangal (củ riềng)
20gr garlic
29gr shallot
50gr tomato paste
1 liter of water

FOR STOCK/BROTH
1kg bones (pork or chicken)
4 liters of water to cook the bones
100gr onion
150gr whole lemongrass
10gr kaffir lime leaves

STOCK SEASONINGS
25ml fish sauce
50gr unrefined salt
120gr sugar
25gr chicken powder
2 Tbs Tom Yum paste
1 Tbs Thai chili paste
1-2 Tbs Thai chili sauce
50gr tamarind paste
(50gr tamarind + 100ml hot water for juice)
