This breakfast casserole might not look low carb, but it is.
With only 4.9 net carbs,
it's something that I can enjoy along with my whole family
because they have been scarfing this down.
Today, we're making a Southwest breakfast casserole
filled with layers of sausage, egg, and veggies
like bell pepper and onion.
So dice up a half of a green bell pepper.
You could use other colors of bell peppers too,
but the green one actually has less sugar.
And then a half of a medium onion.
If you really need to make this lower carb,
just lower the amount of veggies that you put in
or just leave them out altogether.
I'm sure you've noticed something layered
in between those sausage and egg layers.
That's tortillas.
But to keep it low in net carbs,
I'm using these soft, fluffy tortillas by Hero Bread,
my sponsor for today's video.
These are flour-based tortillas.
And what I love about them is that each tortilla
has seven grams of protein, is high in fiber,
resulting in zero net carbs.
I've been hearing all these rave reviews
about Hero Bread in the Facebook groups,
and so has Hero because they just launched a new recipe
and they're making their products
with heart-healthy olive oil.
They also plan to release new products this year,
which I'm really excited about,
including a monthly release of croissants.
For this casserole, you're gonna need eight Hero tortillas.
There's only six in a pack, so buy two packs.
Right now, Hero Bread is offering my audience
10% off of an order of $50 or more.

Their sandwich bread is also amazing
and tastes and feels like regular bread.
I like how thick these slices are, too.
Onto the eggs, add six eggs to a large bowl.
Then pour in 1 1⁄2 cups of unsweetened nut milk,
and I'm using macadamia nut milk,
but you can use whatever kind you want,
and then 1⁄2 cup of heavy cream.
Salt and pepper for flavor.
Whether you eat breakfast first thing in the morning
or later on, having the first meal of the day
already prepared for you is gonna set you up for success.
That's why I love breakfast casserole so much.
It makes enough portions to last you the whole week,
and you just reheat it when you're hungry.
To a large skillet, pour in a tablespoon of cooking oil.
I'm using avocado oil.
Then add in one pound of ground sausage
and cook that until it's browned and cooked through.
Add in the diced onion and the bell pepper,
and then saute that with the sausage
until they're both softened.
Now we add in our Southwest seasonings.
Two teaspoons of chili powder,
a teaspoon of garlic powder,
and 1⁄2 teaspoon of ground cumin.
Combine that and stir it until you start to smell the aroma,
and then add in a can of tomatoes with green chilies.
Again, if you need this to be lower carb,
just decrease the amount of tomatoes you add in,
or you can just leave it out altogether.
We're gonna let this simmer for 10 minutes.
This is gonna evaporate some of the moisture
from the tomatoes,
just so that your casserole won't be soggy.
Now to assemble.
Layer down half the tortilla halves
onto a greased casserole dish,
and then top that with half of your sausage mixture,
and finally sprinkle on 1⁄2 cups
of shredded Colby Jack cheese.
You can use 100% cheddar here too,
or just even less cheese if you want.
Then you're gonna repeat the layers.
Finally, pour the egg mixture over top.
Then you're gonna cover this with aluminum foil
and bake at 350 degrees Fahrenheit
for around 50 to 60 minutes,
just until the center is cooked through
and no longer jiggly on top.
You can top with sour cream, pico de gallo,
avocado to complete the dish,
but if you thought this recipe sounded horrible,
which trust me, it's not,
