Hi, I'm Jerry James Stone,
and you're watching Cooking Stoned.
In today's episode, I'm gonna show you how to make
one of my favorite, favorite breakfast meals.
It's this breakfast nacho.
The thing that I like about the breakfast nacho
is it sort of adds a social component.
It's great for brunch.
It's like you can make a big pile of it,
and people are diving in together.
It's super tasty.
And the reason I wanna show you how to make this today
is because fan Kristen M,
who doesn't have a photo or anything else on her profile,
but she had requested this.
She requested chilaquiles,
and I feel like you probably can be happy
with these breakfast nachos,
so I'm hoping, Krista, that you'll enjoy these.
But if not, let me know, and I'll make you chilaquiles.
So let's dive in and get this recipe going, shall we?
So the first thing we wanna do is add,
we're gonna add a little bit of ranchero sauce
to the bottom of our pan.
This is where we're gonna bake the eggs.
Pile on our chips kind of around the sauce area.
So you're kind of creating a little bit of a puddle.
We're gonna add some of that ranchero sauce
to the chips, too.
Add in some beans here.
You can use whatever kind of beans you want.
I'm just using black beans, refried beans,
whatever your bean of choice is.
Pile that on.
Now we're gonna add in shredded cheese,
because what's nachos without a ton of cheese?
It's really, I mean, nachos are really
just a vehicle for cheese.
It's more chips, more ranchero sauce,
more of the beans, and more of the cheese.
Are you hungry yet?
Now we're gonna add in a couple eggs,
because these are breakfast nachos,
not regular nachos.
Go through those eggs there.
And you can never have enough ranchero sauce,
just to be sure.
And now we're gonna bake this until the eggs are set
and the cheese is melted.
So the first thing we're gonna do here
is add in some pico de gallo,
because every plate of nachos needs fresh salsa.
You can use any salsa you want, salsa verde, whatever.
Just go ahead and pile that on.
And then we're gonna add in some fresh avocado here,
or guacamole if you happen to have that on hand.
Next thing is sour cream.
I used a Greek yogurt.
You can use whatever, but it tastes good.
So either way works.
And then some freshly chopped cilantro.
And how awesome do these look?
There you go.
Get the hell out of my kitchen.
I need to clean up.
