1 bag of “Bánh hỏi” (Vermicelli noodles)
MARINADE (add to the meat before freezing)
3gr. salt
4gr. chicken powder
10gr. sugar
A pinch of vietnamese five herbs (ngũ vị hương)
2gr. baking powder
1/2 Tsp oyster sauce
1/3 Tsp fish sauce (optional)
1 Tsp Cooking oil (or Annatto oil for nice color) (Dầu điều)
1.5 Tbs lemongrass juice (add 1.5 Tbs ice-cold water to 40gr. chopped lemongrass)
MARINADE (add to the meat after freezing)
12gr. minced garlic
15gr. honey
Pepper
20gr. breadcrumbs or toasted sandwich
FISHSAUCE DIP (traditional method)
450gr. water
140gr. sugar
18gr. unrefined salt
40gr. fish sauce
1/2Tbs vinegar
PICKLES
500gr. thinly sliced reddish
300-400gr. thinly sliced carrots
250gr. water
250gr. vinegar
5Tbs sugar
1Tsp salt
