Welcome to Chef Salim's Recipe Channel! In this video, we’re making a delicious and authentic Turkish Mixed Vegetable Dolma Recipe — a traditional stuffed vegetable dish prepared with a hearty filling of rice, bulgur, and sautéed minced meat. This recipe is ideal for large gatherings, as it serves up to 20 people!

Ingredients:

600 grams rice

600 grams bulgur

300 grams sautéed minced meat

300 grams fresh or frozen tomatoes – adds a juicy and slightly sweet flavor

2 tablespoons tomato paste and ½ tablespoon pepper paste – for rich color and a hint of tanginess

Spices: red pepper flakes, salt, garlic powder, black pepper, mint, cumin, and a little sugar – these spices bring depth and aroma

Sunflower oil, lemon juice, pomegranate molasses, soy sauce, and bone broth – to enrich the dolma with moisture and flavor


Vegetables for Stuffing:

Dried eggplant

Red bell peppers

Green peppers

Zucchini (larger sizes are best for stuffing)


Preparation Steps:

1. Soak the rice and bulgur in water for about 40 minutes.


2. In a bowl, combine frozen tomatoes, sautéed minced meat with onions, pepper paste, and tomato paste.


3. Add spices for an aromatic filling, ensuring they’re well mixed.


4. Drizzle in sunflower oil and finely chopped onions for flavor and texture.


5. Prepare the vegetables by hollowing out the zucchini and peppers, removing the seeds to make space for the filling.


6. Combine the rice and bulgur mixture with all ingredients for a perfect filling texture.



Cooking Tips:

Stuff each vegetable loosely to allow room for the filling to expand.

Place the filled vegetables on a baking tray, add bone broth mixed with lemon juice, soy sauce, salt, sugar, and a touch of tomato paste as cooking sauce.

Cover and bake at 170°C (338°F) for 1 hour, adding an extra 15 minutes if needed.


Serve with yogurt or cacık for a refreshing touch, and enjoy the perfect Turkish dolma!
