This sweet peach cobbler is the perfect way to end summer and will have everyone at your table
reaching for more. Make this warm mixture of fresh juicy peaches, topped with a biscuit-like dough
and sprinkled with cinnamon in just one hour. Thinly slice the peaches. In a non-stick frying
pan, melt some plant-based butter. Add the peaches and stir for a few minutes. Add the brown sugar
and a dash of cinnamon. The cinnamon brings out the sweetness of the peaches.
Cook on medium heat for a few minutes and stir until the sugar is dissolved.
The peaches will get really juicy and flavorful.
In a large bowl, add the flour, sugar, baking powder, and salt. Mix together.
Pour in the milk, vanilla extract, and maple syrup. The maple syrup will add some sweetness
to the batter. Stir all the ingredients together until combined. Add the melted vegan butter to a
9 by 13 inch baking dish. Make sure it's spread out evenly. Pour the batter into the pan
over the melted butter and smooth it into an even layer.
Spoon the peaches and juice over the batter. Sprinkle some cinnamon generously over the top.
Bake at 350 for about 40 minutes. Once the cobbler has cooled down,
serve warm with a scoop of dairy-free ice cream or whipped cream. And if you like to make homemade
whipped cream for your fall dessert, be sure to check out my vegan whipped cream video.
