I'm Yuto and today on Stachy I'm going to show you how to make delicious pan fried teriyaki salmon.
First I'm going to prepare some vegetables to serve with it.
This is Chinese spinach and I'm just going to cut it into thirds and remove the roots.
Place the thickest part in a pot of boiling water and set a timer for one minute.
While you wait prepare a bowl of ice cold water ready for later.
After one minute add the middle part and set a timer for 45 seconds.
This method of staggered blanching helps ensure that no part of the spinach is under or overcooked.
Finally add the top leaves and continue to cook for 30 seconds.
Drain the water and place the spinach in ice cold water for a few minutes.
In the meantime preheat a frying pan on medium and add one tablespoon of cooking oil.
While it's heating pat your salmon fillets dry with kitchen paper
and season them with a pinch of salt and pepper.
This salmon fillet is quite big usually I would use two to four smaller fillets
but this looked really nice in the store and wild caught salmon is in season in Japan at the moment.
Coat the surface with one tablespoon of potato starch or any starch
and rub it over to create a thin even layer.
Then add them to the preheated pan with the skin side facing down.
Let that cook for four minutes or until crispy.
While you wait heat a separate pan with one tablespoon of butter
and once it's melted add 100 grams of cut asparagus.
Thoroughly squeeze the spinach and add it to the pan then season with salt and pepper to taste.
Stir fry for about two to three minutes and then take the pan off the heat.
Make sure not to forget about your salmon while the vegetables are cooking.
Check often to make sure it's not burning.
Okay I'm going to flip my salmon now.
Fry on the other side for two minutes and while you wait prepare the teriyaki mixture.
Grab a small bowl and add one and a half tablespoon each of soy sauce,
mirin, sake and one teaspoon of sugar.
Give it a mix and once two minutes have passed pour it into the pan.
Paste the salmon with the sauce until it thickens and becomes glossy.
This looks great so let's dish up.
I'm starting with a bit of multi-grain rice and placing the vegetable across the top.
This is not really how we serve teriyaki in Japan but I took some influence from
western-style one plate dishes for this recipe
and the battery vegetables taste seriously good with the teriyaki salmon.
Place the beautiful teriyaki salmon on top and drizzle with the leftover sauce from the pan.
Finish the dish with a sprinkle of sesame seeds and that's it.
Delicious Japanese teriyaki salmon served with a western twist.
