I make this sometimes when my girlfriends come over for brunch and they call it a hug
in a cup.
Hey guys, I'm Cassandra Bodzak, holistic lifestyle guide and host of Eat With Intention TV.
And today I'm going to show you how to make these baked gluten-free oatmeal cakes that
are going to change the way you think about waking up.
So let's jump in.
The first thing we're going to add is our gluten-free oats.
Now these are really great because you can prepare them ahead of time and so you have
that quick, ready-to-go breakfast every morning.
You know it's healthy and it's great for you.
Now we're just going to add some baking powder and a little bit of salt, there we go, and
some cinnamon, but you can feel free to get creative with this, maybe throw in some pumpkin
pie spice or nutmeg.
And now we're going to add in our wet ingredients.
So first we're going to add in our flax eggs.
For those of you who haven't heard about flax eggs, they're super simple to make.
It's just one tablespoon of flaxseed meal, three tablespoons of water, and they can substitute
for eggs in any recipe.
So they're going to be acting as our binder for our oatmeal cakes today.
So I'm going to add those in, and next I'm going to put some maple syrup and some vanilla.
I put vanilla in everything.
Vanilla makes everything taste better.
Feel free to have fun with the amount of vanilla you use.
And then some applesauce.
Applesauce is going to make it nice and moist and sweet.
Next is our bananas.
So the trick with the bananas is you want to try to find the ripest bananas possible,
so if they're already mushy, even better.
This is great if you have some bananas laying around and you want to use them up before
they go totally bad.
There we go.
And then we can peel them and stick them in.
These are going to add a nice little sweetness too.
And now we're going to mix this all together.
So now we're going to add the berries.
I have my muffin pan, and you can bake this oatmeal in a loaf pan if you like, but I really
love using a muffin or a cupcake tin.
And we're just going to scoop it in and pop these in the oven, and they'll be done in
10 minutes.
All right.
So our oatmeal cakes are all out of the oven, and they are smelling delicious, and we're
ready to plate them.
So I'm just going to take one of my little oatmeal cakes, and then what I like to do,
you could eat it just like that if you wanted to, but I like to make it a little fancy.
So we're going to take our almond milk, and we're just going to pour it around our oatmeal
cake.
So you have a little milk moat around your cake, and I'm just going to top it off with
some fresh berries.
How easy was that?
It's super simple and delicious.
You have your gluten-free strawberry banana oatmeal cake all set to go, ready for you
every morning.
