Hi I'm Nicky, welcome back to our kitchen where we show you how to make delicious
family-friendly recipes. Today we're going with
thin and crispy chicken schnitzel that's perfectly seasoned
and paired with a beautiful garlic caper butter sauce
it's absolutely delicious and it's a really simple way to serve chicken
that is absolutely bursting with flavour, so let's get cooking.
So I've got four medium-sized chicken breasts here they're about 175 grams or
6.2 ounces each and we're going to start off by
butterflying them. To butterfly the chicken you want to take the chicken
breast and then slice it horizontally through the middle not all the way
through because you want to be able to open it up like a book.
Repeat that with all four chicken breasts.
Now take one of the chicken breasts and place it on a large piece of baking
parchment and then fold the parchment over the
chicken so it's completely covered and then we're going to bash it lightly
with a rolling pin until it's about quarter of an inch thick.
Then repeat with the remaining chicken breasts until they're all equal
thickness. This is going to help the chicken breast
cook quickly and evenly and be nice and juicy throughout.
So now we're going to coat the chicken so we want to take three large shallow
bowls, in the first bowl place 60 grams or half a cup of plain
all-purpose flour and then we're going to sprinkle on
half a teaspoon each of salt and black pepper
and a teaspoon each of garlic powder and paprika and mix together.
In the second bowl add two large eggs and give them a whisk together
and in the third bowl we want to add 100 grams or two cups of panko breadcrumbs.
Now take one of the chicken breasts and dredge it in the flour mixture so it's
completely coated. Then we're going to dip it in the egg
and make sure we coat both sides fully and finally we're going to coat fully in
those panko breadcrumbs and place on a tray. We want to repeat
that for the remaining chicken breasts. It's really important to make sure that
egg fully coats the chicken otherwise the panko won't stick and we
want a really nice crispy coating throughout the whole chicken.
Now we want to add 240 ml or one cup of oil to a large frying pan
and heat that over a medium heat. We're going to be working in two batches
so once the oil is hot we want to add two chicken breasts to the frying pan.
Cook the chicken breasts for two to three minutes on each side
until golden and crispy and cook throughout.
Then remove the chicken from the pan and place on the tray.
So I'll place those cooked chicken schnitzel on a baking tray and we're
going to put them in a low oven to keep warm while we cook the second batch.
I'll place them on a wire tray and that helps to keep the coating nice and
crispy and then while we're cooking this second
batch we're also going to make the caper garlic butter sauce.
To make the garlic caper butter sauce we're going to add 120 grams or half a
cup of unsalted butter to a small pan.
Heat the pan over a low to medium heat we're going to let that butter melt and
start to foam a little and it should start to turn very
lightly brown this should take about three to four minutes.
Now turn the heat down to low and we're going to add in three minced cloves of
garlic, cook for a further minute while stirring
to gently saute the garlic. Now turn off the heat and we're going to
add half a teaspoon each of salt and black pepper,
two tablespoons of capers and brine that have been drained
and three tablespoons of finely chopped fresh parsley.
Give it a stir together and then put that to one side.
I wish you could smell it in here it smells absolutely fantastic.
By now all the chicken should be ready and we're ready to serve.
I love to serve this chicken schnitzel with some nice boiled potatoes
and a simple green salad. Now spoon over that garlic caper butter
and then we can finish it off by serving with some lemon wedges.
I absolutely love serving crispy chicken this way those tangy capers with that
lovely rich garlic butter just go so well with it and if you like this
you're going to love my lemon chicken piccata,
see you over there.
