How to Make Kilis Tava Kebab: A Traditional Turkish Recipe Full of Flavor!
😊Welcome to Chef Salim’s Recipes! In this video, I’ll guide you through preparing Kilis Tava Kebab, a traditional Turkish dish known for its rich flavors and delicious ingredients. Follow along step by step to create this flavorful kebab at home. Perfect for serving large groups, this recipe is sure to impress!
🌟Ingredients:
8 large eggplants, peeled and sliced
3 kg fatty lamb meat, coarsely ground
1.2 kg onions, finely chopped
500 g green peppers, finely chopped
200 g dried red peppers (soaked and chopped)
1 bunch of parsley, finely chopped
60 grams of salt (10 grams per kilogram of ingredients)
2 tablespoons cumin
1 tablespoon black pepper
1 tablespoon spicy pepper paste (not tomato paste)
3 large tomatoes, sliced (for garnish)
Olive oil (to grease trays)
Method:

Prepare the Meat: Cut the fatty lamb meat into small chunks and grind it coarsely, keeping some texture.
Chop Vegetables: Finely chop the onions, green peppers, garlic, and parsley. Soak and chop the dried red peppers as well. Avoid using a blender to preserve the natural flavors.
Soak Red Peppers: Soak the dried red peppers in water to soften them, then chop finely.
Mix Ingredients: Combine the ground lamb, chopped vegetables, and soaked red peppers in a large bowl. Add 60 grams of salt (10 grams per kilogram of ingredients), cumin, black pepper, and spicy pepper paste. Mix thoroughly by hand.
Prepare Eggplants: Peel and slice the eggplants diagonally. Arrange them in a greased tray to cover the surface completely.
Assemble Kebab: Spread the kebab mixture evenly over the eggplants. Gently press the surface and score the top for even cooking. Garnish with sliced tomatoes.
Bake: Roast in the oven until the top is golden brown and crispy. For an authentic taste, use a wood-fired oven if available.
Serve: Slice the kebab and serve with soup, rice, salad, and a refreshing drink for a complete meal.
