Well hello there fabulous people. Merry Christmas to you all and welcome back to my channel.
Today I'm going to be showing you how I turned this beautiful raisins Christmas cake into some
perfect little gifts for friends and family. It's a very thoughtful way to express yourself
to friends. So if you like edible gifts, this is the video for you. Remember to click the like
button, share this video with your friends and family and also subscribe. So if you're ready,
let's get started. I'm going to begin by using 170 grams of raisins.
Just throw this into a jar and I'm adding some orange juice.
Fill up the orange juice until it covers the raisins at the top. Now mix it very simply.
I'm going to cover the lid and I'll leave it to soak in this orange juice for at least 24 hours.
It's the next day and I'm going to begin by preparing my dry ingredients. So I'm using
self-raising flour, baking soda, ground ginger, mixed spice and a little pinch of salt.
Simply sieve to make sure there's no lumps at all in your flour.
I'm going to simply put this in a dry bowl. I'm going to set this aside for now.
Now the raisins have soaked for 24 hours, so it's time to blend it up.
So I'm going to simply throw it into my blender, cover this and blend it until it's nice and smooth
in texture. Now this is all nicely smooth. I'm going to throw this straight into my mixing bowl
and I'm beginning now with my wet ingredients. So to this I'm using the blended raisins with
three large eggs. I'm going to add half a cup of soft brown sugar, a little dash of vanilla
and 100 grams of melted butter. I'll simply mix everything. I'll mix very well until everything
is nicely combined. Now this is very optional. I'm going to add one tablespoon of dark rum.
If you don't like alcohol, feel free to skip this part. I love the smell of dark rum in my
raisins cake. It smells and tastes absolutely gorgeous. Now it's time to bring in the dry
ingredients that we prepared earlier. So I'm going to simply pour in the dry ingredients
and simply begin to fold. You want to not over whisk this, just fold it very gently.
So put in the second half of the flour and fold it very nice and gently.
Now take a look at this gorgeous raisins cake batter. It's beautiful and smells amazing already.
Now we're ready to bake. So I've already pre-lined my loaf tin. I'm using a loaf tin
just because I'm intending to slice this up into lovely little squares and to gift them as
presents. But if you're not doing that, remember you can always use a round cake baking tin to bake
this cake. It would come out perfectly as well. So I've preheated my oven to 170 Celsius and I'm
going to bake this for one hour exactly. It's been one hour later. The cake is perfectly ready.
I like to insert a little toothpick inside the middle just to make sure it's baked through
nicely. Now I'm going to leave it in my rack and allow it to cool down completely
before we slice them up and wrap them into nice little presents. You need to make sure you're not
wrapping up hot cake otherwise it would just be sweating in the paper. So leave it to cool down
completely and look at this absolutely gorgeous raisins and rum cake. It's just perfect for
Christmas. So it's nicely cooled down for at least one hour and I'm going to slice this up.
I'm planning to slice mine into six thick slices so that they're just the right size to be wrapped
up nicely for Christmas presents. So feel free to slice yours either smaller or slightly bigger
if you wish. Now take a look at this beautifully baked Christmas rum cake. I'm ready to wrap it up
now. So I'm using a parchment paper. I'm going to simply fold on either sides,
turn it around and just fold it very simply. Nothing complicated at all.
Now once that's ready I'll leave this to the side for now and I'm using
a simple ribbon, any from any craft shop at all near you. Just pull, it should be able to make a
lovely little bow, place it nicely on the cake, flip it around and make a little knot at the back
just to make sure it's nicely secure. That's perfect. One down, five to go.
And we're going to continue wrapping until we've finished wrapping every single one of the six
cakes. So again I'm using a very simple fold method. Wrap it nicely, then I'm using a ribbon,
any from your craft shop would do. Flip to the back of it and just make a simple knot
just to make sure it's nicely secure. And that's it. A very lovely simple way to present
perfect little thoughtful presents for friends and family which I'm sure everyone would love
and appreciate so much. You can always go to the shop, buy gifts and presents for your friends
and family but when you actually bake and make something by yourself it is so thoughtful and
beautiful. Thank you all so much for watching. I hope you can try out this recipe and gift this
gift to your friends and family as well. Remember to like this video, share it with your friends
and family and also subscribe. I'll see you again next time. Have a very Merry Christmas. Goodbye.
