Alla Carbonara

Rainy day, I’m at the mountain house, I’ve lit the fire and I’m preparing a carbonara with homemade pasta, guanciale from Norcino, aged pecorino from Sardinia, Parmigiano Reggiano, and fresh farm eggs.
Naturally, I made a portion without guanciale for my daughter, who is vegetarian.
