Oh, look at that!
Fabulous!
That's corned beef and mozzarella potato pancakes made.
Hi everyone, welcome to Backyard Chef, I'm Rick.
Today we're making corned beef mozzarella stuffed potato pancakes.
It is a tasty, tasty, quick recipe to make.
Quickish, you know.
I've already mashed some potatoes.
My potatoes have been mashed but there's no butter, no milk, no cream, no nothing in there.
They are straightforward potatoes.
And we've obviously got corned beef.
Corned beef that we made on the channel, there's a link up here now.
Or buy it in a can.
Okay, it's a simple recipe.
We need to get some oil in a pan.
A little bit of oil.
We're going to go in there with some butter too.
A little bit of butter.
Let's have a flame on, eh?
Let's get the flame on.
In there.
That'll do.
A little bit of butter.
A little whizz round in there, look.
Fabulous.
In with our onion.
Nice and gentle.
A little saute, a little stir fry on the onion.
Translucent.
If you get a little bit of colour, so be it.
But don't try and brown it all over.
Not that it matters really, you know.
It's going inside our stuffed potato pancakes, so it'll be fine.
Now, straight away I'm going in there with a little pinch of thyme.
I'm going to let the thyme rehydrate with the onions.
Just a tiny, tiny bit of flavour in there, you know.
Got a little bit of salt going on in there, look.
And we've got a little bit of pepper.
A little stir through.
Don't rush your onions, nice and steady.
See if we can get them very, very translucent.
Soft all over.
Now, when you've cooked your onions to how you want,
in there with your corned beef.
Now, this is corned beef that we made the other day.
Well, a few days ago.
But not to worry, nice and little steady, break it up in there.
Cook it in there with those onions.
Now, it doesn't need to be cooked as such, you know.
Corned beef is already cooked.
We just want a little bit of that in there.
The idea of breaking it up and mixing it with the onions
just will make it a little bit easier when we come round to
sticking it in our potato pancake.
A tiny splash of Worcester sauce.
Just pep up the flavour in there, you know.
A little touch of garlic powder.
Probably about half a teaspoon.
A little touch of onion powder.
Probably about half a teaspoon.
Nice little stir through.
Flame off.
Corned beef filling, done.
Let it go cold.
Spread it out in your pan.
Put it somewhere to cool down.
We want to be using quite a cool mix.
So we have these lovely mashed potatoes in here
which have gone quite cool.
Which, that's fine.
We've got an egg.
Give it a beating.
Just makes it easier to stir it in our potato.
In it goes.
As quick as that.
A little bit of pepper.
Let's put a little bit of something in there.
A tiny little bit of salt, not much.
Now you can give this a little stir through first.
So that's slightly incorporated.
Then our flour.
So we need a mix in.
And this is going to be our dough.
This is our potato pancake.
So you can keep stirring it around if you so wish.
Or, you get your hand in.
We want a potato dough.
So when you've brought it all together like that,
that is our dough made.
Okay, a little bit of flour on there.
And then you need to be taking your potato dough
and you need to divide it up.
So you're going to want some flour on your hands
and you're going to take some of that
and you're going to decide how big the ball is
that you're going to want.
It's as easy as that really.
Nothing complicated.
Now you can weigh it out on a scale if you want it exact.
Not a problem.
Okay, when you've decided how many you're doing,
I'm doing 2, 4, 6, 8, 10, 11, 12.
A little bit of flour on those like that.
Just squash it a little bit like that.
A little bit of flour.
Just put them to one side.
Now we know exactly what we're doing.
It's nice and steady.
So we're basically just making our potato pancake.
We're just making the shape
and then we're going to put our filling in.
It's just easier that we know exactly how much filling
roughly is going in each one.
So we've got 12 of those.
We want roughly 12 mixers.
So what we'll do,
we'll do a heaped tablespoon
and then we'll put some more in.
So if I just put one of these on here.
So you can see what we're doing here.
I want that on there like that.
I'm going to take a bit of that there like that.
And all we're doing is that.
Bring it all up over the top.
Get it in there.
Now you have to sort of like squash it in
because if not, when you come round to frying,
it will burst out.
So there we go.
As easy as that.
Job done.
And then what we do,
we put that on a tray.
So that's what we're doing.
I'm going to take that
and I'm going to fill some corned beef in there.
I'm going to go on there
and it's just fold over your potato.
Like that.
Turn it over.
Okay.
It's just a case of getting some oil in a pan.
On with the flame.
When these pancakes first come out of here
after we fried them,
we're not resting them on kitchen towel.
We're going to rest them on a rack
and they will drip onto kitchen towel underneath
but they will stay a little bit crunchier.
So when you think your oil is hot enough,
it's time to slide some of those pancakes
in there.
Now don't forget,
everything is cooked completely inside.
So it can be nice and steady.
Flip them over.
Fabulous.
Look how fabulous they look.
Out they come.
And slide some more in.
And just repeat until you finish them all.
It's coming here.
Oh, look at that.
Fabulous.
Oh, come on.
Look at that.
We've got to get Doug in.
Come on.
We're in on this one.
Oh.
Look at that.
That gooeyness in there.
Oh, with that corned beef.
Look at that.
Oh, that is awesome.
Incredible.
If you like your ketchup,
in with the ketchup.
Ah.
Unbelievable.
That is absolutely amazing.
That potato shell is delicious.
Look in there.
We know what's in there.
We put it in.
Oh.
Man, that is so good.
That really is good.
Wow.
That's corned beef
and mozzarella potato pancakes made.
That is delicious.
Now, what's it going to be like with mustard?
Come on.
Let's have another one.
Got to get some mustard on here.
We've got to give it a try with mustard.
See what it's like.
Nice little bit of English Coleman's.
Oh.
Wow.
That is absolutely fantastic.
That potato shell
all the way around that corned beef.
The potato shell is absolutely delicious.
Oh.
It just elevates it all.
You know, it's better than pastry.
That is superb.
Now, you know,
eat it with what you like.
Eat it with ketchup, mustard, sour cream.
Eat it with veggies.
Eat it with gravy.
That is fantastic.
It really is fantastic.
If you like what we're doing,
big thumbs up.
