What's up foodies? In this video I'll teach you how to make cottage cheese pancakes. If you love
fluffy high-protein pancakes that are healthy and super easy to make, stick around because you don't
want to miss this. Plus I've got two secret tips to make these pancakes even healthier and gluten
free without sacrificing any of that amazing flavor. Let's dive right in. First thing first,
we are going to blend cottage cheese, eggs, vanilla extract and sweetener. For the sweetener
you can use white sugar, brown sugar, maple syrup, honey, agave syrup or even stevia. If you prefer
sugar-free pancakes you can leave the sugar out. Personally I use one two teaspoons of maple syrup.
Blend it just until it's smooth. This keeps the pancakes light and airy.
Next we add flour, pinch of salt, baking powder and cinnamon. And here's the first tip that I promised.
While you can use regular white flour, I prefer to use spelt flour. It's much healthier for you
and the taste is still amazing. Some will say it tastes even better. Later on I'll give you another
tip to make it healthier and gluten-free. Give it a quick blend. Do not over mix or your pancakes
might get too dense. And we are ready to cook. Heat your pan over medium heat and lightly coat it
with oil or cooking spray. I use olive oil but you can use any oil. Now pull about one quarter of a
cup of butter onto the pan and cook the pancakes. You'll know it's time to flip when you see bubbles
forming on the surface and the edges start to set. Usually around one to two minutes. And here is the
second twist I promised. Did you know you can make these pancakes gluten-free and not just any
gluten-free but using oatmeal? It's super easy and I'm going to show you how. First grab some rolled oats
and blend them into fine flour. Then we go through the same process. Blend the cottage cheese, eggs,
vanilla and sweetener. Then add in your oat flour, salt, baking powder and cinnamon.
Blend it again until smooth. And that's it. Cook them just like we did before.
And voila, gluten-free cottage cheese pancakes. Serve these pancakes with fresh fruit, yogurt or a
drizzle of maple syrup for ultimate breakfast experiments. Two amazing versions of cottage
cheese pancakes. Both delicious, both super easy and both perfect for any breakfast table. Whether
you stick with the classic or try out the oatmeal version, you're going to love them. Before you go,
