I'm Yuto and today on Stachy I'm going to show you how to make delicious chicken katsu
in the oven, no frying required.
Before we start I'm going to prepare my oven to 220 degrees Celsius or 428 Fahrenheit.
So first take about 300 to 450 grams of chicken breast, remove the skin if it's still on and
cut it into slices.
Cutting the pieces thin like this reduces cooking time meaning it's less likely to dry
Next we're going to stab each piece with a fork, this again helps tenderise the meat
so it's going to be nice and soft after we cook it.
Now sprinkle it with a pinch of salt and pepper and transfer to a bowl.
Add about 1 tablespoon of flour and mix it around until all the slices are evenly coated.
After it's all covered, add 2 tablespoons of mayonnaise and again mix it around until
all the pieces are covered.
Mayonnaise contains vinegar and eggs both of which help break down proteins and fat
tenderise the chicken even further but that's not my only reason for coating it in mayonnaise,
it's also going to help the panko breadcrumbs stick.
Once it's all covered set aside.
Next grab a dry pan and add your panko breadcrumbs, we're just going to cook them over medium
low heat until they turn golden brown.
You might think this step seems pointless because they're going to be cooked in the
oven but I actually find they don't colour much in the oven mainly because this recipe
doesn't use oil.
Make sure to mix the panko continuously to prevent any burning, it takes a few minutes
to start changing but as soon as they start to brown they'll suddenly darken very quickly
so lift the pan off the heat to prevent burning.
Once the panko looks like this transfer it to a plate or container and let it cool for
a few minutes.
Next take your chicken slices, coat them generously in the panko breadcrumbs and place them on
a wire rack that fits your oven tray.
Using a wire rack stops burning and helps them cook evenly, I'm sure this recipe would
work great in an airfryer too, let me know in the comments if you try it.
Now that they're all covered place them in the oven on the bottom shelf and bake for
10 minutes.
After 10 minutes flip them all over and bake for another 15 minutes so 25 minutes of baking
time in total.
While we wait for these I'm going to show you how to make a sauce, grab a small bowl
and add 2 tablespoons of ground sesame seeds, 2 teaspoons of soy sauce, 2 teaspoons of Worcestershire
sauce, 1 tablespoon of tomato ketchup, 1 teaspoon of sugar and 4 teaspoons of water.
Whisk it all together until combined and that's it.
Okay so the katsu have finished baking so let's take them out of the oven.
Serve it with the sauce for drizzling or dipping and that's it, delicious oven baked chicken
katsu that you can serve however you like.
