Hey there, I'm Pailin, author of the new cookbook, Sabai, all about weeknight-friendly Thai recipes,
and today I want to show you how to up your carb game with Thai sticky rice, which is this chewy
rice, totally satisfying, and a must-try. Here's how to make it. The rice to get is Thai glutinous
rice, sometimes labeled as Thai sweet rice, and you want to start by washing it four to five times
until the water runs mostly clear. This gets rid of excess starch and it will prevent the rice from
becoming gummy. Then, cover it with hot off-the-boil water, and you want to submerge it by about an
inch here, and let that soak for 20 minutes. After soaking, give it another rinse with water and then
let that drain, and now it just needs to be steamed. You can steam it any way you want. A simple steamer
rack like this lined with a wet tea towel works great. I like to use a traditional tool, that's
this bamboo cone steamer here, but whatever the setup, steam the rice over boiling water for about
25 minutes. And that's it! Now you've got this perfect looking sticky rice, and we eat this
with our hands because it's so sticky. It's so good, and because it's chewy and substantial,
we love to pair it with meats like barbecued meats or fried chicken,
and it also works really well in desserts like our famous mango and sticky rice.
