Hello everyone and welcome to my channel.
If you are new, my name is Rachel Amah and for this week's video I wanted to do some
student friendly meals.
I'm making each of these under £1, they're simple, they're quick and easy and they're
vegan.
If you have me on social media, you see I've been working across the UK, I've actually
been working with some students and I've been cooking with them and sharing with them
some really budget friendly meals so I couldn't not come on here and share some of the recipes.
So I'm sharing two recipes today.
Please give this video a thumbs up if you're excited for the budget friendly student meals
this week.
Also subscribe because I'm here every week with new videos to share with you guys.
So the first one that I'm going to share with you today is kind of like a loaded potato
chilli thingamabob, don't know what to call it, really really hearty, simple, minimal
ingredients, under £1 per serving so let's get into it.
So we've got some plain white potatoes, some garlic, red onion, some spices as well as
some tomatoes, kidney beans and that's how simple it is and I've listed the cost down
below and where I got them from.
And if you want to use sweet potatoes instead, they're a little bit more expensive but they've
got more nutrients in them, completely up to you.
So the first thing I'm going to do is poke some holes in my potato and then I'm going
to pop it into a preheated oven, the temperature's nice and high.
If you want to be quick you can just use a microwave as well, each your own.
Then I'm going to finely dice up some red onions, get them nice and small.
Then using my pot I'm just going to add a little bit of oil, you can saute in water
if you prefer and we're just going to add the onions straight into there to get them
to cook, loosen up and become nice and translucent.
Then I'm going to grate in some garlic, I hate cutting garlic so I'm always grating
this stuff.
And then we're adding our spices, now it's like under a pound for a whole bag of spices
so I didn't really add it to the costings, I just used paprika and cumin, kept it really
really simple because it would work out like less than 5p for a teaspoon.
Then I'm going to add in my chopped tomatoes once the onions have mixed with the spices
and started to soften up.
Give it a good mix, get the flavours all infusing and getting all tasty.
And then I'm going to add in some kidney beans.
Then you want to season with some salt and pepper, if you have some maple syrup you can
add a little bit of that too or if you want to add a little bit of sugar it will just
add a nice gentle sweetness so no more than a teaspoon but completely up to you, you don't
have to do that.
Now that the potatoes have cooked, the outsides are nice and crispy, we're just going to pop
them open.
I love a good jacket potato, it's the British in me, we love a potato, look at that, beautiful.
Now you could add the chilli just straight onto that but we're making loaded potatoes
so we're going the extra mile a little bit here.
So I'm going to take the insides out of the potato, add it to a pan, I've added some vegan
butter, seasoned with a bit of salt and pepper, then we're going to break it up a little bit.
Now the next step isn't going to look that aesthetically pleasing but it tastes wonderful.
So we've got the kidney beans, it's been sitting, it's been cooking, you can add some chilli
to this as well, I think I forgot to say I added a bit of chilli but we added a little
bit of chilli too and we're going to mix that in straight with the potatoes, now as I said
this doesn't look amazing but the taste is amazing.
So now we're going to load up our potatoes with the potato and kidney bean mixture and
I had plenty of kidney beans left over, I didn't add all of it in.
Then I'm going to sprinkle on a little coriander on top, now I have coriander in the garden
growing so I always have it but you can buy it.
Now to take it to the extra step we're going to put some vegan cheese on top, this is optional,
completely optional, get your favourite melting vegan cheese, put it in the oven until it
melts and then you've got these loaded vegan potatoes, add some chilli on top and it's
so simple, so hearty, so delicious, try it out and let me know because I personally love
it.
As I said you don't have to add the vegan cheese if you don't like vegan cheese but
if you do have a favourite vegan cheese then add it on top, you could also add just some
nutritional yeast, salt and pepper, up to you but there we have it.
Now the second recipe I want to share with you is inspired by the recipe I recently posted
on my Instagram except I'm using a bit less ingredients this time just to make it more
budget friendly but by all means if you have the ingredients use them so I'll let you know
as we go on what you could add extra and what you can use to keep it budget friendly.
Really simple recipes and definitely delicious so let's get into it.
So we have got some rice noodles, garlic, ginger, some soy sauce which you could use
coconut aminos instead, a bit of maple syrup and you could use sugar instead if you want
to keep it cheaper and some mixed veg from the supermarket which I'll leave all the costing
down below of what I got and how much it cost.
First thing we're going to do is prep our rice noodles so I'm going to get some boiling
water in my magical tap that everyone seems to be scared of and I'm going to add the rice
noodles straight into the pot, pop the lid on and let it cook.
Now you don't want to overcook rice noodles, there's nothing worse than soggy rice noodles
so you want to follow the packet instructions and do, I like to do it just a little bit
under, just a little bit and then once it's done I run it under some cold water to make
sure it stops cooking while I get the stir fry ready.
Now I'm going to grate in ginger and garlic, me and my grater, you can chop these, you
don't have to grate, I just have a habit of grating.
I use loads of ginger because I just love ginger, it brings great flavour and it's just
so addictive and then I'm adding in my veggies and I'm sautéing this in just coconut oil
which again is optional, you can use whatever oil you have or if you don't like to use oil
don't use oil.
Then I'm just going to throw them about, get them dancing, get the flavours cooking.
Then I'm adding in some soy sauce, as I said you could use coconut aminos and then some
maple syrup and you could use just regular brown sugar for this.
Then you just want to mix it all together and this is such a quick recipe, throw in
your rice noodles that are just very slightly undercooked because they're going to cook
a little bit more now in all the flavours that we've made.
Mix it all together, get the garlic and the ginger active in the rice noodles, add some
salt and black pepper, taste it, see if you want to add a little bit more coconut aminos
or soy sauce or add a little bit more, add some more chilli flakes, add some more, whatever
you fancy.
Then to finish I just had some spring onions in the fridge, got some coriander straight
from the garden, popped it on top.
Also I forgot to mention if you do have some white wine vinegar, a vegan white wine vinegar
that will work really well in this too but if you don't have it, it's totally fine.
You could squeeze in some lemon juice, some lime juice, then I also had some peanut oil
that I've been adding to my stir fries lately and I'm obsessed.
And then this is the finished noodles.
Another thing I sometimes do is add tomato paste to this, like a teaspoon to a tablespoon
and that also adds some great flavour as well.
Get those chilli flakes in there, super, super simple, quick, student friendly meals that
are delicious.
And you can also use frozen vegetables if you have them in the fridge and especially
with the stir fry, if you have any vegetables in the fridge, you can just throw them in
there and it's a great way to use them up and get some veggies into your diet.
