If you love a creamy coffee drink,
but you're trying to cut back on dairy,
this easy vegan latte is for you.
All you need is three simple ingredients to make it,
and it turns out better than any store-bought
non-dairy milk that I've tried.
You don't even need an espresso machine to make it.
To get started, you'll need one cup
of hot, home-brewed coffee.
Add that to a blender,
along with one to two pitted Medjool dates,
depending on how sweet you like your coffee.
I like to use two dates,
because I brew very strong black coffee,
but you can also leave them out
if you prefer an unsweetened drink.
And the last thing you need
is roughly one teaspoon of almond butter.
I'm using raw almond butter here,
so it doesn't have a strong roasted flavor,
but you can also use cashew butter instead.
Blend this all together until it looks creamy.
Since you're blending a hot liquid,
be sure to let the steam escape
out of the vent in your blender's lid
by lightly covering it with a thin towel
so you don't get splashed in the process.
This recipe isn't great for bullet-style blenders,
because there's no way to vent the steam in those,
but you could safely make a cold version
using cooled coffee for an iced latte
if that's the kind of blender you have.
If you have a high-speed blender,
the ingredients should be totally pulverized
in about 30 seconds,
but other blenders might take a little longer.
You can pour this into your mug right away
or pour it through a strainer
to catch any small date pieces
that might have been missed by your blender.
I love how this latte develops a foam on top,
just like a real latte from a coffee shop
without using any specialty milks.
For a fun variation,
you can also make this dairy-free latte
using whole nuts, like pistachios or hazelnuts,
for a pistachio or hazelnut latte.
Just be sure to strain the drink well in that case
so you won't have any leftover pulp in your latte.
You can also use tea instead of coffee to make a tea latte.
I especially love it with Earl Grey tea
to make a London fog-inspired drink.
I hope you'll enjoy this easy latte as much as I do,
