I have a beautiful relationship with my two sons,
which I love if you guys are watching, mommy loves you.
And we talk a lot about food.
And one of the things that they like,
they like snack foods that also ends up being a dinner,
kind of like breakfast for dinner.
So today I'm gonna make you guys a quick little snack dinner
that the boys love.
It's quick and easy to create a flavorful dinner
that's better than eating out.
So if you have 10 minutes to spare,
use three minutes to pressure cook the chicken
For this quick recipe, you'll need chipotle sauce,
tomato sauce, guajillo chili powder,
garlic powder, onion powder, ground cumin,
black pepper, water, a bay leaf,
tomato chicken bouillon, Mexican oregano,
coconut sugar, and two chicken breasts.
Start by warming up the pressure cooker on saute.
Then you want to trim the excess fatty pieces
from the chicken.
Make sure to save them.
We'll need them a little further in this recipe
to infuse the beans.
Continue by slicing the chicken breast real thin,
as this helps cook the chicken quickly.
Once you've chopped your chicken,
you're gonna go ahead and drizzle a little bit of oil
and you're gonna add your guajillo chili powder.
It should only take you about 20 to 30 seconds
to toast your chili with the oil.
And that's an important step to bring out the best flavor.
Then you're gonna add your water,
add your tomato chicken bouillon,
onion powder, garlic powder, ground cumin,
black pepper, Mexican oregano, a bay leaf,
coconut sugar, if you don't have coconut sugar,
you can also use brown sugar or regular sugar,
a can of tomato sauce, and half a can of chipotle sauce.
Go ahead and give that a loving mix.
And now you can start adding the pieces of chicken.
Put a lid on it and pressure cook for three minutes.
And boom, done, our chicken's ready.
I'm gonna go ahead and give this a quick pressure release.
Be careful not to burn your hands.
Ooh, just a quick and perfectly cooked chicken,
exactly what I need for dinner today.
It smells so good because I love smoky adobo flavors.
And this is just giving my house a beautiful potpourri.
Apparently I've shared with my knife now, it's that easy.
To prevent your chicken from being super dry,
I definitely suggest you do a quick pressure release.
As soon as you hear that pin drop,
you're gonna open it up and start shredding.
You're gonna have a lot of sauce left over.
Don't throw it away.
Go ahead and pour it over your chicken
once you're done shredding it.
And if you don't wanna make
what I'm gonna show you right now, that's okay.
This chicken works great for burrito bowls,
which I've never heard anybody complain about them.
And this is where the fatty parts
of the chicken come in handy.
I've already warmed up my pan
for a good minute on a medium heat.
I'm gonna go ahead and add my little fat here.
We're gonna allow it to render.
And while that renders, I'm gonna blend my beans.
It's gonna be so much flavor in these beans today.
I'm gonna go ahead and saute our onion
and our serrano pepper.
Once you've cooked your onions,
you can go ahead and add your blended beans.
If this is gonna be your first time having beans
with rendered chicken fat, you're in for quite a treat.
Funny thing is that the chicken is done
way before I'm done cooking my beans.
So that's how quick and easy this recipe is.
I know you guys are gonna love it,
but don't forget to season your beans.
I'm gonna add a little bit of salt
and then we're set and ready to serve.
You're gonna place your flour tortilla on your griddle.
Now you can start adding your chicken.
I do have my griddle on a low heat
because it gets really, really hot.
And even if you're using a regular pan, that's okay.
You still wanna keep it on a medium, medium-low heat.
I know all the moms that have teenagers
are gonna love this recipe
because the kids are just gonna look at you
with those beautiful, loving eyes,
like, wow, mom, you made this.
Then you wanna add your cheese.
Queso chihuahua melts beautifully
and it has a really delicious, nutty, buttery taste
that everybody loves in my family.
And you can move it along quickly
by placing a lid right over the top.
It's gonna help produce more heat
and melt that cheese on the top.
Once your cheese melts,
you wanna add some crema to the top or some sour cream,
then some shredded lettuce, cotija cheese,
and some thinly sliced avocado and some red radish.
It's nice and crispy and ready for you to slice.
I'm gonna need somebody very special to say ah.
This is all the cheesy gooeyness
that you've been missing in your life.
It's so good.
The warm beans, the smoky adobo, and the cheese on top,
you're in for quite a treat.
As always, Claudia and I are wishing you the best.
We absolutely adore you.
Let us know if this recipe worked for you
because we have a few more that we'd love to share with you.
And on that one, we'll see you guys tomorrow.
Bye.
