Ingredients.
For the zucchini crust, two medium-sized zucchinis, grated.
One teaspoon salt.
Half a cup almond flour.
A quarter cup grated Parmesan cheese.
One large egg.
One half teaspoon dried oregano.
One half teaspoon garlic powder.
Salt and pepper to taste.
For the toppings, half a cup sugar-free pizza sauce or marinara sauce.
One cup shredded mozzarella cheese.
Your choice of keto-friendly pizza toppings, e.g., pepperoni, sliced bell peppers, mushrooms,
olives.
Instructions.
1.
Preheat your oven to 425 degrees Fahrenheit, 220 degrees Celsius and line a baking sheet
with parchment paper.
2.
Place the grated zucchini in a colander and sprinkle with salt.
Let it sit for about 10 minutes to allow the excess moisture to drain.
3.
Squeeze out the excess moisture from the grated zucchini using a clean kitchen towel or paper
towels.
4.
In a large bowl, combine the squeezed zucchini, almond flour, grated Parmesan cheese, egg,
dried oregano, garlic powder, salt, and pepper.
Mix well until all the ingredients are combined.
5.
Transfer the zucchini mixture onto the prepared baking sheet.
Spread it out evenly to form a round pizza crust or any desired shape.
6.
Bake the zucchini crust in the preheated oven for about 15 to 20 minutes or until the edges
are golden brown and the crust is set.
7.
Remove the crust from the oven and let it cool for a few minutes.
8.
Spread the sugar-free pizza sauce or marinara sauce evenly over the crust, leaving a small
border around the edges.
9.
Sprinkle the shredded mozzarella cheese over the sauce and add your desired keto-friendly
pizza toppings.
10.
Place the pizza back in the oven and bake for an additional 10 to 15 minutes or until
the cheese is melted and bubbly.
11.
Remove from the oven, let it cool slightly, then slice and serve your delicious keto zucchini
crust pizza.
