Hello lovelies.
You guys probably know by now that I am all about
keeping things quick and simple in the kitchen.
And never is that more true
than in these beautiful summer months
when the weather is nice and warm
and I would much rather be outside playing with my kids
than inside cooking in the kitchen.
And that's why today I am sharing
a really tasty make-ahead meal idea
that I think you guys are going to love.
It is this chicken Caesar pasta salad
and it's the kind of dish that can all be thrown together
during your Sunday meal prep
and then enjoyed for two or three days,
meaning less cooking for you
but still really delicious eats for your family.
Now I really wanna make this pasta salad something special.
So instead of using store-bought dressing,
I'm actually going to be making my own
and you won't believe how easy it is.
Now I'm opting in this recipe
for a nice light Caesar vinaigrette.
So it's not going to be a creamy Caesar dressing,
it's going to be an oil-based dressing.
If you wanted to swap the oil for some mayo
to make a creamy dressing, you totally could
but you're not going to believe how light and fresh
the vinaigrette version of a Caesar dressing can be.
Now, like I said, to get started,
I have got some olive oil in my bowl.
To that, I'm going to be adding
some classic Caesar salad flavors,
starting with some lemon juice.
So I've got one whole lemon I'm going to be adding in here.
I love lemon because it's nice and acidic and tart.
If you have not invested in a citrus press yet,
I highly recommend making this summer
the summer that you do.
It just makes jobs like this so much easier.
So we're going to get our lemon
straight into our olive oil like so.
And then I'm going to be adding some Parmesan cheese.
So this is definitely a place
where you wanna use freshly grated Parmesan.
The flavor is absolutely incredible.
I've got about a quarter cup headed in here.
I'm also going to be adding
a good splash of Worcestershire sauce here.
It's got a really savory flavor that I absolutely love.
Now, you might not know this,
but a classic flavor in Caesar dressing
is actually anchovy paste.
And if you don't have any anchovy paste on hand,
Worcestershire is the next best thing
because if you didn't know it,
Worcestershire is actually made with anchovies.
So it's got a really beautiful flavor.
I also wanna add even more impact to this dressing.
So I've got some Dijon mustard headed in here.
Finally, and most importantly,
when you're talking about a Caesar dressing,
we are going to go for it with some garlic.
I'm adding one whole clove of garlic here,
and I'm just going to use my rasp
to grate it straight into my dressing.
And I'm actually going to be adding the whole clove.
Don't say I didn't warn you.
This is gonna be a bit on the potent side.
If you want it to be a little less potent,
go ahead and use half a clove instead.
And then we will just give it a whisk.
I also wanna hit this liberally
with some salt and some pepper.
And I know it doesn't look like much yet,
but honestly, when you mix it
with all of the other yummy ingredients
we're going to be putting in this salad,
you are going to be glad.
Now the base for this pasta salad,
not surprisingly, is some pasta.
So I've got some cooked rotini in my bowl.
You can use really any kind of pasta you want here.
I just cooked it until it was al dente
and then let it cool completely.
That's really important
before you add the rest of your ingredients.
I like to toss my pasta in just a little bit of olive oil
to prevent it from sort of clumping
and sticking together as it cools.
And then I just transfer it to a nice big bowl like this.
Now, of course, because this is Caesar-inspired pasta salad,
we wanna make sure
we get some nice, bright, crunchy greens in here.
Of course, that means romaine lettuce.
I'm also going to be adding some chicken to this.
So I want this to be nice and protein-packed.
You could add some cooked salmon here or some cooked shrimp.
Even some cooked beef would be really, really good.
You could also leave the meat out of this recipe entirely.
It's up to you.
I've got some grilled chicken
that I just sort of put on the grill,
cooked up with a little bit of herb and garlic seasoning,
and I'm going to get that into my bowl.
Next, I want to add this absolutely amazing dressing,
and we're just going to pour it all right over.
You won't believe how much flavor is happening in here.
I'm also going to add some bacon to this.
So again, a classic Caesar salad ingredient.
I just cooked up a couple slices of bacon
and then chopped them up.
And finally, I've also got
some shredded Parmesan headed in here.
I'll give this all a really good toss
until it's well coated in that beautiful dressing.
And honestly, guys, that's pretty much it.
This yumminess is ready to be enjoyed right away,
or you can store it in the refrigerator
for two or three days.
It's perfect for serving as lunch or dinner,
or you can even bring it to your next pool party or potluck.
I promise everyone will love it.
I like to bring that Caesar salad experience full circle
by shaking in some croutons right before serving.
You don't want to add them any sooner or they'll get soggy.
And honestly, guys, this stuff is absolutely amazing.
Lunch is served.
It's light and fresh, but flavorful and filling.
I hope you love it as much as I do.
