Growing up chorizo was a staple in my home and things haven't changed much around here.
I'm going to show you three quick and easy recipes that are going to make you feel like
you're on vacation. If you put in long hours, you get home, you're exhausted, the family's
giving you hungry eyes, the last thing you want to do is cook. I hope that you find these recipes
helpful because you should rest not stress. As far as chorizo goes, you have some options.
You can use beef or pork and if you're not sure which one to go with, I definitely suggest
going with supremo. They pack an authentic flavor. Some pre-packaged chorizo will be
eight ounces, supremo gives you 14 ounces. I have a lot of recipes that I've shared with you.
I've made it with soy and I've been known to make it with carrots but whatever your preference is,
I'm sure you're going to find the perfect chorizo to fit your family's needs. And to ease your pain
in the kitchen, you want to meal prep your chorizo so you can do it on one of those days when you're
not so tired or you can save it for the weekend. So once you're done cooking your chorizo, you're
going to want to place it in a container. Set your pan on a medium heat and allow it to warm up
for a good minute. Next, you're going to add all of your chorizo and when you're cooking a large
quantity of chorizo, it might take you 10 to 15 minutes to fully cook. In the meantime, you can
get started by cooking your potatoes and for the beans, I like to cook a little bit of onions and
some oil to add a little bit more flavor and then you're just going to pour your can right on in.
And since you've been working so hard, you're going to need to use black beans because they're
good with antioxidants. And boom done! Our chorizo is ready. Now I can show you how to assemble your meal
and I'll be using a large container to store our chorizo and our potatoes.
And to divide our ingredients, I'm going to use a parchment paper.
You have an easy meal prep. For your tostadas, you're going to need some pre-made tostadas. I
recommend you find these. These are called tostadas raspadas and they just bring out a
beautiful corn flavor and it really packs a delicious crunch. As for your guacamole, I
definitely suggest you make it the day of and if you don't have that kind of time or you don't feel
like it, it's okay to just slice your avocado. And my family secret is to squeeze a little bit of
lemon or lime juice to your lettuce and it stays crispy for the next few days. And if you haven't
tried the Sierra Cotija cheese from Supremo, you're gonna have to find it or spend your day
off looking for it. And if you need to satiate your spicy cravings, pick your favorite pre-made salsa.
So your chorizo sticks to your tostada, you want to add a generous amount of guacamole.
If you don't like guacamole, I understand you can use some sour cream.
And then you're gonna add your chorizo, lettuce,
your choice of salsa, and make your rain cotija. And boom done, your dinner is ready.
For the burrito bowls, you're gonna want to get some shredded cheese,
a can of beans, and these work great for me. They are pre-made rice, you can get a five-minute rice,
any pre-made rice is going to help you out for your burrito bowl. A little sour cream, lettuce,
favorite salsas, your chorizo, and your set. Take your rice and place it in your bowl.
Add your chorizo, lettuce, some cheese, beans, guacamole, and some salsa.
And my favorite out of all three has got to be the spinach chorizo burrito,
so I hope you enjoy it as much as I do.
And for your burritos, you want to warm up your chorizo and you're going to add your potatoes.
And what I like to do is mash the potatoes just a little bit.
Combine your ingredients and cook them until everything's nice and warm.
I know you're going to want to add some eggs, but resist, I promise you're going to love it.
Slightly warm up your tortilla, don't overdo it. Take your spinach, place it at the bottom.
And usually when I make this, I actually add more spinach than chorizo. Was that your tummy growling?
Then you're going to add your chorizo and papas. And you're ready to roll.
Pull it nice and snug. Although I think I went heavy on chorizo today.
Fold it from one side tightly. You're set and ready to eat your burrito.
As always, Claud and I are wishing you the best. We absolutely adore you. And let us know in the
comments, how do you like to enjoy your chorizo? And on that one, we'll see you guys tomorrow. Bye!
