I'm having peanut butter and jam overnight oats for breakfast at a meal prep yesterday.
On Sundays, I usually meal prep a breakfast, lunch, snack, and dinner. This time I'm meal
prepping for three days, so we'll be eating these meals from Monday till Wednesday. My boyfriend and
I are both currently trying to write our master's thesis, and we both also work full-time, so meal
prepping saves a lot of time. Overnight oats are one of my favorite breakfasts to prep because they
take less than five minutes to make. This time I'm making a peanut butter and jam flavor. I make a
healthy jam by using just strawberries and chia seeds. The recipe for the jam is in the description
box. When the oats and jam have both had enough time to set, I add the layers into jars.
This overnight oats flavor is my new favorite. The refreshing jam tastes perfect with the creamy oats.
Then I just store the jars in the fridge. For lunch, I'm having a caesar salad jar that I meal
prepped yesterday, so I'm going to show you how I made these. I made the dressing from scratch, and this
time I wanted to try out a hack I saw on social media to make the dressing a bit lighter. So I just
added some greek yogurt to it and less oil, and it really tastes just the same. You could also just
add some greek yogurt to a store-bought dressing to save time. The point of salad jars is that you
add the dressing to the bottom and veggies on top, so that the veggies won't get soggy. So first I
added the dressing, then chicken breasts that I baked in the oven, next I'm adding some kale,
and a boiled egg, then I add some mixed greens, and lastly a little bit of parmesan flakes.
Then I just store these jars in the fridge. Before serving, I just pour all the ingredients into a
bowl and mix everything together. For snack, I'm prepping my high-protein hummus with some vegetables.
Homemade hummus is super easy to make. You just add all the ingredients into a blender or food
processor and blend until creamy. The secret ingredient to this hummus is cottage cheese, but
don't worry, you can't even taste it in the hummus. It just gives it an even creamier texture and adds
protein. This hummus recipe makes about four servings, so I made four snack boxes. Three for myself
and one for my boyfriend, since he works the beginning of the week at the office and then
the rest of the week he works from home. Such a yummy snack idea. You have asked for a meatball
recipe, so I'm making greek style meatballs for dinner. I'm adding some herbs and feta to the
mixture for flavor. If you don't have IBS, add some onion and garlic to this as well.
Then I just mix all the ingredients together and then I roll them into balls.
I bake the meatballs at 200 celsius degrees 390 in fahrenheit for about 12 to 15 minutes.
I serve the meatballs with rice and a greek style salad. Rice gets bad quite quickly,
so I cook it just before serving every day. Then I also added a homemade yogurt sauce on top.
Such a tasty meal. I always need something sweet after dinner, so I'm having a piece of dark chocolate
for dessert. Every morning I take my supplements. I take a fish oil probiotic and I'm also testing
out a new supplement, but I'll let you know how that goes. I take the probiotic before breakfast
and then the fish oil with the breakfast because the omega-3s should absorb better when you take
them with a meal. For lunch we're having the caesar salad. I just filmed a mango slushie
recipe video for instagram, tiktok, and youtube shorts, so we're gonna have this for dessert.
This mango slushie is a perfect dessert for spring and summer. It's so refreshing and yummy.
Now I'm editing a short film video for instagram, tiktok, and youtube shorts, and then I'm gonna
start editing this what I eat in a week video because I know it will take so long to edit.
Now I need to write my master's thesis because I have not done it at all this week.
The salad chars are definitely the best way to meal prep salads because the greens
are still nice and fresh and not soggy at all. Such a tasty lunch. I just did a workout and
now I'm having a hummus veggie box for snack. I filmed the recipe video for these healthy
cham chocolate bites earlier today and now I'm gonna have one of these for dessert.
I posted the recipe video for these cham bites last year and they went viral, so I had to make
these again this spring because they are so good. It's Thursday now and today I'm gonna be filming
several videos for instagram, tiktok, and youtube shorts. I still have a couple of videos left in
my healthy snack series, so we're gonna start with one of those. So we're gonna make a healthy
strawberry mango smoothie and have that for breakfast with some eggs and toast.
On Thursdays, I often do a mini meal prep. This time I'm prepping another type of salad char.
I'm making a caprese style flavor with homemade dressing, chickpeas, mozzarella,
quinoa, lots of arugula, grape tomatoes, and fresh basil. We'll eat these chars on Saturday, so I put
them into the fridge till then. Then I'm making the same salad in a bowl and that we'll eat for
lunch today. This is one of my favorite salads to make because it's so quick and easy to make
because the only thing you need to cook is the quinoa. Then you just mix all the ingredients
together. Super simple, but so delicious. In the afternoon, I filmed a high protein chocolate and
ice cream recipe video and we had that for a snack. You only need four ingredients to make it.
Frozen bananas, cacao powder, milk of choice, and then you can also add some protein powder.
It's so good. Super creamy, chocolatey, yummy.
After cooking and filming recipe videos almost the whole day, I don't really feel like making
anything complicated for dinner, so we're just gonna make pesto pasta. I'm gonna use pimento
pasta and add some red pesto and some parmesan on top and then we're gonna make a side salad.
They're like the viral chocolate covered strawberry yogurt clusters but in a pop form.
They're so good. We both had one of these for dessert and I stored the rest of them in the
freezer. I felt like having something sweet and savory for breakfast, so I fried us some eggs and
also made a simple yogurt parfait with Greek yogurt, strawberries, blueberries, and some almond
butter. I just did a workout and now I'm gonna head to Helsinki city center to have lunch with
one of my friends. I had a fresh country salad for lunch. This salad had kind of everything.
Potatoes, cherry tomatoes, green beans, eggs, some bacon, and a mustard sauce.
In the afternoon, I made my boyfriend and I a berry smoothie for a snack. I added frozen strawberries,
frozen wild blueberries, greek style plant-based yogurt, and almond butter. Such a refreshing and yummy
snack. Now I'm heading to one of my friend's place and we're gonna have a girls night. We're probably
gonna order some food there but I'll show you guys what we get. We ended up ordering pizzas.
My gluten-free crust cost four euros extra. It was okay but nothing special. The best part was
playing with my friend's new puppy. She's so cute. When I got home, Aaron and I had these chocolate
jam bites that I had made on Wednesday for dessert. On Saturdays, we like to make something more
fun for breakfast so we're gonna make chocolate banana pancakes. These pancakes are super easy
to make. You only need four ingredients. First, I'm mashing two bananas.
Then I add four eggs and mix until smooth. Then I add two scoops of vegan chocolate protein powder
but if you don't have protein powder, you can just add half a cup of flour instead. Lastly, I add two
tablespoons of unsweetened cacao powder. Then I cook the pancakes on a non-stick skillet for a few
minutes on each side. I top the pancakes with homemade healthier Nutella and strawberries.
These pancakes are chocolatey, super yummy and contain over 30 grams of protein per serving.
In the afternoon, we went to the gym and I was starving after our workout so I had to go get a
snack. I don't eat protein bars very often because the artificial sweeteners in them make me bloated
but I found this vegan one and it tasted pretty good and I didn't get bad idea symptoms. We just
came back from the gym and we're gonna have those salad jars for lunch that I meal prepped on Thursday.
I'm working on my master's thesis again. My goal is to write four pages a week
and I have now written half a page so it's gonna be a fun weekend. For dinner, we're gonna make
homemade chicken nuggets and roasted potatoes and then we're gonna have some fresh vegetables
with a dip. In the first bowl, I have some gluten-free flour mix, salt and pepper. In the
second bowl, I have a beaten egg and in the third one, I have gluten-free breadcrumbs. Then I just
roll chicken pieces first in the flour mixture. Then I dip them in a beaten egg and lastly roll
them in the breadcrumbs. I bake the chicken nuggets at 200 Celsius degrees, 390 in Fahrenheit
for about 15 to 20 minutes. I bake the potatoes for 10 minutes longer. We also chopped a lot of
vegetables and made two dips to go with them. The chicken nuggets turned out so good. Such a tasty
meal. For dessert, we had the last two chocolate strawberry puffs we had in the freezer.
On Sunday, I made us a berry banana smoothie and cheesy scrambled eggs for breakfast.
For lunch, I'm making super easy crunchy chicken wraps. I made these same wraps in my latest meal
prep video and I've been craving these ever since. They're so tasty and also super quick to make.
I marinated the chicken and baked it in the oven. Then I mixed together coleslaw salad, coleslaw
dressing, and the chicken. Then I topped tortillas with lettuce and the coleslaw chicken mixture and
folded the wrap. So easy and tasty. I made a yogurt bowl for a snack. It's just greek-style
plant-based yogurt, peanut butter, strawberries, and cornflakes for some crunch. We're making the
viral salmon rice bowls for dinner. We hadn't made the viral salmon rice bowls in almost a year,
but so glad we now did because they are so delicious. You just need salmon, rice, and for the
sauce, I just mixed together some hot sauce, light mayo, and soy sauce. We topped the bowls with
cucumber, avocado, chives, and sesame seeds. Then if you like, you can eat it with sushi nori.
This is like a quicker and easier way to make sushi.
It's so good. Those are all the meals I had this week. Let me know in the comments if you want to
see more what I eat in a week videos or what I eat in a day videos because I'm happy to make
more of those. I hope you try the recipes. Enjoy!
