now let's get started
let's make dashi, Japanese soup stock using a dashi packet
in a medium saucepan add 2 cups of water and 1 dashi packet
start cooking over medium heat
when it reaches a boil reduce the heat to medium low and shake the packet a few times to release more flavor
simmer for 2 to 3 minutes and discard the packet
you'll need half cup of dashi for this recipe and you can use the remaining for making miso soup
now cut the onion in half and thinly slice it
cut one green onion diagonally into thin slices and set aside
cut half pound of sliced beef into pieces about 3 inches wide
without turning on the stove in a large frying pan add half cup dashi
2 tablespoons sake
2 tablespoons mirin
3 tablespoons soy sauce
and 1 tablespoon sugar
add the onion slices and spread them throughout the pan separating the onion layers
then spread the sliced beef on top of the onions
cover the pan with the lid
now turn on the heat to medium and start cooking
once boiling skim off the scum and fat from the broth with a fine mesh skimmer
this improves the taste
turn down the heat to a simmer and continue cooking covered for 3 to 4 minutes
meanwhile serve steamed rice into large donburi bowls
once it's done cooking sprinkle the green onions on top
to serve put the beef and onion mixture on top of the rice
garnish the gyudon with a pickled red ginger
enjoy!
