Hi everyone, it's Raquel of Raquel's Carbon Cuisine and today's recipe is going to be a super moist
plantain bread. So over here I have some extremely overripe plantains and if I try to fry these
they're going to be way too mushy, sucking up a lot of oil and if I try to boil them,
same mushiness. So the best thing to do is to make a plantain bread. Same ingredients as a banana
bread but I believe it is just way more delicious and if you have never tried this before just give
it a try. Now I'm going to mash these which is fairly easy due to its overripe flesh but you
could also add this to the food processor or a blender if they are firmer in texture to get them
nice and mushy. So now that these sweet plantains are nicely mashed, now in with one cup of sugar
and as I mentioned same ingredients as a banana bread. I'm going to give this a nice whisk
and this recipe is fairly easy. I'm going to whip this up in minutes. No mixer is needed. The whisk
works perfect. Now in with one stick of melted butter, two beaten eggs and I love to add a bit
of lime zest to the eggs which cut the egg smell plus add a nice flavor and also to this I'm going
to add a quarter cup of milk and any milk would work and of course I'm going to add some vanilla
essence which gives that awesome flavor. Yes so now that we are done with the wet ingredients,
I'm going to push it aside. Now it's time for the dry ingredients. So now to our bowl I'm going to
add one and three quarter cups of flour, half a teaspoon salt, two teaspoon baking powder,
half a teaspoon baking soda which is a leavening agent. It helps the bread to rise. Also going to
add some cinnamon powder and a bit of freshly grated nutmeg and these are simple ingredients
but they give amazing flavor. Now I'm going to mix this nicely then I'm going to sift this into the
planting mixture and all you're going to do now you're going to mix until everything is nice to
combine and it's really that simple and this planting butter smells just amazing. You could
taste this and tell there and then that this is just going to be so good. Lastly which is very
optional, I like chewy stuff in my planting and banana bread so I'm going to add some currants
and cherries once again optional. Now to an eight inch grease baking loaf pan I'm going to pour the
butter in and to a 350 degree preheated oven I'm going to allow this to bake for about 45 to 50
minutes. 50 minutes later this is smelling oh so good. I'm going to allow this to cool down just
a little bit before cutting into it but it's very delicious when it's served warm and this wasn't on
the lighter side it's more on the slighter dense side but extremely moist not to mention absolutely
delicious. This was way nicer than any banana bread. I want to thank you so very much for
watching and a full written recipe will be listed down below in the description box.
