Hey, welcome to another episode of the Park's Kitchen.
Today we're going to be making garlic chili oil noodles, which is a very popular dish
and it's so tasty.
And remember this in the previous episode, we made about a gallon batch of this beautiful
Sichuan chili oil.
We're going to be using some of this in today's recipe.
And if you're curious about how I made this chili oil, I'll put a link below in the description
section.
So without any further ado, let's get to it.
Let's go over the ingredients.
We got knife cut Taiwanese noodles, Sichuan chili pepper flakes, roasted sesame seeds,
garlic cloves, brown sugar, chopped green onion, and some of that chili oil we made
last week.
We also have some dark soy, which can be substituted with regular soy if you don't have it.
And also very importantly, Chinese black vinegar, a non-diluted version.
And also we're going to add some oyster sauce for the extra umami flavor and some vegetable
oil.
First, we're going to need to chop some garlic cloves.
We need to finely chop it, but it doesn't need to be minced.
And I'm chopping all five cloves because after all, this is garlic chili oil noodles and
garlic is a key ingredient.
Adding two tablespoons of dark soy sauce, which can be substituted with regular soy.
Dark one just adds more color.
One tablespoon of oyster sauce.
A lot of people skip this ingredient, but I think it's very important because it really
adds that umami flavor.
And also adding two tablespoons of Chinese black vinegar, tablespoon of Sichuan pepper
flakes, add the chopped garlic and a tablespoon of roasted sesame seeds and one tablespoon
of brown sugar to balance the tar.
Now time for the rockstar ingredients, the Sichuan chili oil we made last week.
I put the recipe link in the description below.
We need about three tablespoons of this, but if you don't like spicy, reduce the amount
of this chili oil and also the pepper flakes we added earlier, because this one will be
somewhat spicy for many people.
Add three tablespoons of neutral oil, such as vegetable oil to your pan and medium heat.
Once you hear it starts to pop, it's ready.
Pour this hot oil over the spice mix we made earlier and let this cook all the spice, including
garlic.
This will sizzle for about a minute or so and stir around to loosen any sediments on
the bottom to cook everything thoroughly.
This smells so amazing.
I can smell every spice that went in there.
While this seems like a lot of oil, don't worry, we're not eating everything.
We just need enough oil to coat all the noodles we're going to be cooking.
Speaking of the noodles, let's cook some noodles in a pot.
Once the water boils, add two packs of Taiwanese knife cut noodles.
The reason why I use these noodles is because they provide such a nice texture with ribbon
like edges and they're wide and they easily absorb all the flavors.
You can also substitute with wide pasta noodles or rice noodles if you don't have this.
These noodles take a little longer to cook, so I'm just going to taste one to see if they're
ready.
Now, add the noodles in the garlic chili oil mixture.
Stir this around for about a minute to make sure all the noodles are completely mixed
with the chili oil.
This smells so amazing.
I can't believe this recipe is so easy and took only about 10 minutes to make it.
I think this is a perfect weeknight meal.
It's so easy.
But if you want to add some protein here, cook some ground pork or tofu and add them
here in this final mixing process.
Plating for one person here, which is me.
I had to use a tongue instead of chopsticks because these noodles are somewhat heavy.
I didn't have enough strength in my fingers.
Final condiments, green onion and extra chili oil.
Sprinkle some green onion as the final touch and you're done.
This garlic chili oil noodles recipe will change your life.
I mean, this is a $30 dish, but not anymore.
