If you are trying to stretch your grocery budget,
you have to try these healthy tacos.
They have all the flavor you love
along with a sneaky serving of plants,
and they make a quick and easy weeknight meal.
The secret ingredient in this recipe is cooked lentils,
which blend right in with the lean ground beef
thanks to their small size.
I'm using a 15-ounce can of lentils to save time,
but you can also cook brown or green lentils from scratch
if you prefer.
Be sure to rinse and drain the lentils well.
If you're using canned, then set them aside.
To get started on the taco meat,
you'll need one pound of lean ground beef,
or you can use ground turkey or chicken if you prefer.
Add that to a skillet over medium-high heat
and break it up with a wooden spoon to help brown the meat.
Add in a teaspoon of salt and continue to cook
and break up the meat into smaller pieces
until all of it is evenly browned.
This should take about five minutes.
When the meat is cooked, it's time to add in those lentils
along with some taco seasonings.
You'll need a half teaspoon of ground cumin,
a half teaspoon of chili powder,
and a half teaspoon of dried oregano.
Stir the lentils and seasonings into the ground beef
and continue stirring until the lentils
have mostly disappeared into the meat.
Add a little salt if you need to,
and then this healthy taco meat is ready to serve.
You can tuck it into your favorite warm tortillas
and add any toppings you love.
Leftover taco meat can be stored
in an airtight container in the fridge
for three to four days,
and you can reheat it again in the skillet
for another fast meal.
I hope you'll enjoy this healthy taco recipe soon,
