Today, we're going to make the best vegan gravy,
and it's naturally gluten-free
because you don't need to use any flour to make it.
It's literally one of the best gravies I've ever tasted,
so I can't wait for you to try it.
To get started, you'll need to chop one yellow onion.
Add a tablespoon of olive oil to a large skillet
over medium-high heat, and saute the onion
until it starts to soften, about five minutes.
Next, you'll need four ounces of sliced mushrooms,
or about one cup, and two cloves of minced garlic.
Add them to the skillet and saute for one to two minutes,
just until the garlic is fragrant.
Now, you'll need one Yukon Gold potato
that is cut into one-inch chunks.
This should be about four to six ounces in weight,
and you don't need to worry about peeling it
because we're going to blend this later.
Add the potato to the skillet,
along with two tablespoons of tamari,
which is a gluten-free soy sauce, and one cup of water.
Bring the liquid to a boil, then lower the heat
and cover the pan to let the potatoes cook
until they are very tender, about 10 minutes.
The smaller you cut the potatoes, the faster they will cook.
Once everything is tender, transfer the contents of the pan
into a high-speed blender.
Add in a half teaspoon of salt
and a quarter teaspoon of black pepper.
Secure the lid and make sure to lightly cover the vent
in your blender's lid with a thin towel
so that steam can safely escape
as you blend the hot liquid.
This is important because you don't want that lid
to pop off your blender from the steam pressure.
Once the gravy is totally smooth,
you can taste and adjust the seasoning as needed.
This has the perfect texture
without using any flour to thicken it,
and it tastes amazing of your favorite holiday meal.
If you want to make this healthy gravy in advance,
it will keep well in the fridge for up to three days
in an airtight container.
When you're ready to reheat it,
you may notice that the gravy thickens up when chilled,
but it will have a runnier consistency
once you warm it up again on the stovetop.
You can always add an extra tablespoon or two of water
as needed to help thin it out again before you serve it.
