A cast on one of my favorite Spanish/Basque wines that doesn’t get the attention it deserves.

We wanted the cellar to look like it was an old European cellar,
so we put some Roman mosaics, which are up there.
And we found this group in Austria that came over with ten men.
Only one could speak English.
And they brought all these bricks with them,
and they just did a sketch and put all these arches and things in.
Burgundy's on this side, Bordeaux's on that side.
Burgundy whites here, and then over in the corner is the Bordeaux whites.
And if you come down here, see what we do is we put the standard bottles in racks,
and then we have the bigger ones hanging out.
Those bottles, you see how big they are?
Those are Nebuchadnezzar, and they hold the equivalent of 20 bottles.
It takes three men to pour it.
The larger the bottle, the better the wine is stored.
What's important is the ratio of the surface area of the cork to the volume,
even though you have a big cork, the volume's so much bigger
that the concentration of oxygen is much less,
which then slows down deterioration of the wine.
This is either Bacchus or Dionysus,
and I thought it would be appropriate out of the wine cellar.
And these are some of the very, very old wines here.
Here's a bottle of 1844 Lafite.
Did you see the wine bathroom?
You want to see it?
I hate to say that we've drunk all the wines and labels on here.
Cork's on the top, and then look in there.
There's the wine mistress. I've yet to find her.
