I traveled to Palang Island in the eastern part of Indonesia to observe the cultivation of Kappaphycus alvarezii (or Cottonii) seaweed, the main source of kappa-carrageenan.
Carrageenan is a controversial food additive. It is most commonly used in food as a thickener or stabilizer.
