Welcome to my Just For Fit channel. My name is Rachel and I would like to share with you how my daily Gong Fu tea sessions looks like.
I start by preparing the leaves. In this case it means cracking into the pu'er cake. Try not to break too many leaves. Whole leaf usually gives higher quality infusions.
Next step is measuring the amount of leaves that we want to use. You can do it just by eye or if you're more geeky like me, you can weigh it on a scale.
For 100ml pot I used little bit over 5g of Sheng Pu'er. Don't forget to look at the leaves and see what you have there.
For this session I chose my 100ml handcrafted by master Xiu Teng Yin Zunyi leafing pot.
I always start by warming up the tea well with hot water. If we would pour water into cold vessel it would immediately cool down and in result we would have wrong temperature for brewing our tea.
It's also important to warm up the brewing vessel before putting dry leaves in it. That really enhances the smell of dry leaves.
I find that closing eyes usually helps to reach our memories and figure out the aroma notes we're smelling.
If you're sharing tea with other people or your teapot has larger capacity than your teacup it's good to pour tea to Gong Dao Bei which is also called a furnace cup and helps to give even out infusion to every cup.
After pouring all the tea from the pot don't forget to leave the lid off so you won't over steam the leaves.
Don't forget to give some tea to your teapot if you have one. This is my monkey named He Jola tea. In Gong Fu Cha there are no strict rules so take your time and make it suitable for yourself.
Pour yourself some cup. Enjoy and don't rush it. Try to pick up some familiar taste notes. Keep brewing your tea with short infusions as long as it still tastes good for you.
Pay attention to the smell and look of wet leaves as well. If you're like me you may enjoy reading a book throughout next infusions.
