breakfast ideas. These are all healthy and delicious and I have a lot more where this
came from so if you guys like this one just let me know in the comments and I can share some more
with you. Anyways let's get right to the video. So the first one I'm going to share with you guys
is banana pancakes and this is a perfect way to use up any overripe bananas if you have any.
And so just like banana bread all I'm going to do is mash up a couple
overripe bananas in a bowl and then I'll add the rest of the ingredients.
And once the bananas are mashed up I'm just going to add in a teaspoon of vanilla as well as one egg
and then I'm just going to give that a really good mix before adding the dry ingredients.
And for the dry ingredients I'm just adding in one cup of whole wheat flour or you could use
regular all-purpose flour and then a teaspoon of baking powder as well as a pinch of salt
and then I'm just giving that all a good mix together.
And then I'm just adding in some oat milk or you could use regular milk and you're just adding this
until it's pancake batter consistency. It depends how big your bananas were how much milk you have
to add like every time I do this I add a different amount of milk but I just pour it in about a
quarter cup at a time until it's the right consistency. And then to cook the pancakes
they're just like regular pancakes and so I just add in a little bit of butter and then I'm pouring
out some smaller pancakes and I'll cook them for about two minutes per side at about medium heat
and then flip them and cook them about another two minutes.
So this does make quite a few pancakes but these are good in the fridge or also in the freezer
and so I just make them all up and then either pop them into the fridge or the freezer and then
whenever we need a quick and easy breakfast we just reheat them in the microwave or the toaster.
And then for serving I just like to top them with a little bit of real maple syrup
and then I just also served it with a fruit salad and I gave her some yogurt.
So next we have some delicious egg bites and so for this one all I do is mix up the egg mixture
first which is just three eggs and some milk. I'm using whole milk this time however I've
done this with oat milk and that works great too. And so once the egg mixture is all whisked
then you just add in your veggies. I'm adding in some chopped spinach and tomatoes this time
however you can add whatever vegetables your kid likes and then I also add in some cheese that just
helps hold it together and gives it some flavor and then I just add in a sprinkle of salt and
give everything a good mix together. And so then I'm just spraying a non-stick muffin tin with some
avocado oil or you can just use olive oil and then I'm just adding in the mixture. You really
want to make sure you're using a good non-stick pan for this one and also it depends how many
veggies you use, how many cups you'll have to fill. For the amount that I used I'm filling six cups.
And then I just popped these into a preheated 350 degree oven for about 20 minutes or until
they're cooked through and these are also great in the fridge or in the freezer so if you want
you can double the recipe and have them for an easy grab-and-go breakfast. And I just served
ours with some avocado slices and some watermelon. And next is just some oatmeal with fruit which is
a super simple one but it's really delicious and healthy for you. And so I'm just adding in some
quick cooking oats into a pot of boiling water and cooking them to what the package directions say.
And then once the oats were cooked I just added in some milk because we like ours nice and creamy
and I'm actually using oat milk for this. And then I also just add in a little bit of honey. I just
find that she likes it better if it has a bit of sweetness to it. And so I just served this with
some berries and some sliced almonds and I just serve hers all separate so she can choose what
she wants to put on. And so last this one's a little bit different but so delicious. These are
sweet potato pancakes or it's kind of my take on the classic latkes. And so all I've done is grated
about one small sweet potato and then I'm just adding in an egg and a pinch of salt. Now usually
if this was just for myself and my husband I would be adding in some grated onion and spices as well.
However this is for toddlers so I'm just doing the sweet potato today and these still turned out so
delicious. And so I've just heated my skillet over about medium to medium-high heat and then added in
a little bit of olive oil. And then once the pan was nice and hot I'm adding in my sweet potato.
And you just try to make it into a pretty flat layer because we want those sweet potatoes to
cook through. And so then once they had cooked on the one side I would say about two to three minutes.
If they're cooking too quickly you can just turn down the heat once the pan was hot.
And then I just flip them over. You have to be a little bit more gentle with these ones just
because they tend to break apart a little bit. But then I just cooked it on the other side for
another couple minutes. And then once those were done cooking I just removed them put them to the
side and then I'm just frying up a couple eggs to serve on top. And for Quinn's I just break her yolk
and serve it as an over hard egg. And so for this one I just served it with some tomato slices and
some avocado. These both go so well with this dish. And then I also topped mine with some hot sauce.
Anyways that's it guys. I hope you guys enjoyed the video. Don't forget to
