What you'll need for this recipe is a half gallon to one gallon of apple cider depending on how
big your crowd is, some frozen or fresh cranberries, if you're making it a mocktail you're going to
want some ginger ale or ginger beer, and if you're making it an adult beverage that's alcoholic you're
going to need a bottle of champagne, as well as a sliced red apple, sliced green apple,
sliced oranges, and a half to one tablespoon of pumpkin pie spice. The first thing you're going
to do is pour about a cup or two of apple cider into a large pitcher. You're going to want a large
pitcher double the size of the amount you're going to make. We're going to make a half batch today,
and then you're going to add a half a tablespoon of pumpkin pie spice. Next what you're going to do
is take a whisk and whisk up the pumpkin pie spice into the apple cider. This will make sure that it
starts to get absorbed. As you can see it's a little bit dry on top. Over time it will settle in
and not leave it all on top, so make sure you whisk it pretty good.
And then after that you can continue to add the rest of your apple cider.
Now if you're making an alcoholic version this is where you would add a full bottle of champagne
depending on how strong you'd like it. You can also add shots of vodka or whiskey to make it
taste to your preference, but today we're going to add two cans of stevia sweetened ginger ale.
If this was a gallon then I would add four cans, but today I'm going to use two. So it is going to
be a slightly carbonated punch, but the ginger flavor will really complement the rest of the
flavors. Now we're going to gently stir it so that the carbonation doesn't get completely lost in the
apple cider. And again this spice will kind of settle in on its own, and this is why you want to
make sure that you make this in a pitcher and then transfer it to a pretty punch bowl. Now we're going
to add our chopped apples that are nice and sliced thin, and we're going to add some cranberries as
well. These could be frozen or fresh, they're more for garnish than flavor. Then we're going to give
everything a gentle stir again.
