These banana oatmeal muffins are made with whole grain oats and bananas and they are gluten-free
and these muffins are soft and moist and packed with loads of nutrients and fibers and they are
perfect for breakfast or to have as a snack anytime. And these banana oat muffins are super easy to
make and we use only a few basic ingredients that are mostly already present in our pantry
and it takes only five minutes for us to prepare the muffin batter and we can bake them and have
these healthy and delicious muffins in about 30 minutes. And in this video let's see how
easy it is to make these healthy banana oatmeal muffins.
To make these oatmeal muffins we can use old-fashioned rolled oats or quick cooking
oats. There won't be any difference in texture as we are using powdered oats in this recipe.
So in this video I'm using old-fashioned rolled oats. I'm taking two cups of oats
and using a food processor or a blender blend them for a few seconds or until
we get a fine flour-like texture. And now we got our oats flour.
So into this oat flour let's add in some salt, baking powder, baking soda,
cinnamon powder and mix everything together so that all our ingredients
get evenly distributed in the oats flour. And let's keep it aside.
And in another bowl add in three bananas and mash them well.
Now we are going to add all the rest of the ingredients into this bowl
and mix them all together. So add in two eggs into this and one teaspoon of vanilla extract,
half a cup of vegetable oil,
and half a cup of sugar. Here I've used soft brown sugar. We can use white sugar as well.
And I'm adding some raisins and walnuts. Here I've used a half a cup of raisins and half a
cup of chopped walnuts. You can use your favorite dried fruits and nuts or we can use chocolate
chips as well. Or if you don't want to add any of these you can skip this step. And now just
mix them all together to form a homogeneous mixture. And now add in our prepared oat flour
mix into this and combine them all together. And if you watch closely you can see small air
bubbles starting to form as the baking soda and baking powder start to act when they get in contact
with our liquid ingredients. So now we need to immediately transfer our batter into the muffin
cups filling each cup about two-thirds full. And now they are ready to go into the oven.
So bake at 375 Fahrenheit preheated oven for 22 to 24 minutes or until a toothpick inserted
into the center comes out clean. And after baking our beautiful muffins are ready.
So take them out of the tray and let them cool down on a cooling rack. And these muffins are
super delicious and at the same time packed with the goodness of whole grain oats and bananas.
And they are soft and moist and they taste absolutely delicious. As these muffins are
good source of energy and lots of nutrients and fibers they are perfect to have as breakfast
muffins. And another thing is that if you don't want to add any of those extra sugar you can skip
adding sugar and make these muffins. This lighter one is made without adding any sugar
and they have a light sweetness from the natural sweetness from the bananas.
And here are some muffins made with chocolate chips and my kids really loved those made with
chocolate chips. So I hope you like this quick and easy oatmeal muffin recipe and I hope you
will make this at home with your favorite add-ons and I hope everybody will love it.
