Sempol is chewy, fragrant, and savory. The dipping sauce is also important.
It's sour, spicy, and sweet.
Hello! Welcome back to my channel, Devina Hermawan.
Today, we'll be making Chicken Sempol.
But, unlike the usual Chicken Sempol, we'll be using Thai dipping sauce.
It's a great alternative to a simple yet delicious chicken dish.
To make this dish special, I chose fresh and high-quality ingredients.
Here are the ingredients.
First, we need chicken, eggs, tapioca flour, flour, garlic, and shallots.
These ingredients are optional. I'll mix them into the batter.
I have red chili, green onions, and kaffir lime leaves.
The kaffir lime leaves will go with the Thai dipping sauce.
We'll also need seasonings such as salt, pepper, sugar, and chicken stock powder.
For the dipping sauce, I'm making a spicy, sour, sweet, and refreshing Thai Sambal.
I have fish sauce, garlic, green bird's eye chili, kaffir lime leaves, Bangkok Sambal, and coriander.
For the Sempol batter, prepare a chopper and add the chicken fillet in.
I bought this from Segari.
For the seasonings, add salt, pepper, sugar, chicken stock powder, garlic, shallots, and other ingredients.
We'll blend the chicken and the seasonings until they're smooth and sticky.
When processing chicken, it's important to choose high-quality chicken.
I'll explain how to do that.
First, make sure the quality of the chicken is fresh and not pale.
It should still look crumbly.
Second, it shouldn't smell and smelly.
Third, if we want to process a whole chicken, choose a clean skin with no fur.
If there's fur, we'll have to clean it again before processing.
The quality of the chicken I mentioned can be found at Segari.
So, you don't have to worry about buying or shopping at Segari as the quality is good.

It's easy to purchase. Just order through the Segari app and you can choose more than 10,000 daily products...
...that can be delivered in 30 minutes with a 100% guarantee of quality.
Once the texture is sticky and smooth like this, we'll add the other ingredients.
There are eggs, tapioca flour, and flour.
For the optional ingredients, I'm adding sliced green onions.
Red chili to make it more flavorful and to add a nice color.
Also, kaffir lime leaves.
We'll be making a Thai-style dipping sauce, so kaffir lime leaves are a must.
Combine everything together and chop again until everything is well-blended.
There are many ways to make Sempol.
First, I'll show you how to make it.
Use a piping bag to pipe the batter into a piping bag or a triangle-shaped plastic.
Cut the end of the triangle-shaped plastic to the desired diameter.
Insert half of the tip of the skewer into the plastic.
As you press the plastic, pull out the tip of the skewer.
Boil it in almost boiling water, but don't boil it too much.
To prevent the batter from sticking to your hands, you can use cornstarch.
Then, poke a hole in the batter and shape it.
Aside from using cornstarch, you can also use oil and shape the Sempol so the batter doesn't stick to your hands.
Once it's done, boil it for 5-6 minutes.
As you can see, the Sempol is floating.
Once it floats, continue cooking for about 1 minute to make sure everything is cooked evenly.
Once it's done, just remove it from the pan.
While we wait, let's make the dipping sauce.
This Sempol goes well with Sambal sauce, but to make it even more special, I'll make Thai-style Sambal sauce.
First, we have coriander leaves, green bird's eye chili, and garlic.
We'll blend them with Sambal Bangkok and fish sauce.
If you don't have Sambal Bangkok, you can replace it with sugar.
The important thing is to get the sweetness.
Then, blend it to the desired texture.
It should look something like this.
Lastly, add lime juice.
I'm using 2 lime juices, but you can use more or less.
I've provided the complete recipe in the description box.
Mix well. If it's still too thick, you can add more boiling water.
Don't forget to taste it. It should be tart, sweet, and salty from the fish sauce.
Lastly, to fry the Sempol, beat an egg. Don't beat it too much.
The important thing is to mix it well.
Dip the Sempol in the egg and make sure the oil is hot.
Then, fry it until it's golden brown.
Mmm...
The Sempol is bouncy, fragrant, and savory.
The bounciness is just right, so it's not chewy.
The aroma of lime leaves, green onion, and chili makes the Sempol unique.
If you're making it for kids, skip the chili.
For Sempol, the dipping sauce is also important.
Some people use chili sauce, sweet soy sauce, etc.
This Sambal Alatai is unique in that it's tart, spicy, sweet, and has the aroma of garlic and coriander.
This type of tart, sweet, and sour Sambal is perfect for fried dishes.
It's also perfect for Sempol and other fried dishes.
Okay, then. Thank you for watching.
