Hi everyone, I'm Marci and now that it's fall and there's a chill in the air I thought I'd share
some soup recipes that'll warm your soul. So I'm kicking things off today with a savory
broccoli cheddar soup. It's so delicious you'll put it on repeat. When you see this broccoli
cheddar soup you're gonna think it took all day to make but actually it comes together
real easily and you can be enjoying it in no time. Here's what you're going to need.
Three tablespoons butter, one small onion chopped finely, two cloves of garlic, one large head of
broccoli. Now I know they come in all different sizes but what you really need is about three
cups of broccoli florets once it's been cut. This is optional but if you like carrots in your
broccoli cheddar soup about two carrots grated should be about right. You'll need two cups of
chicken or vegetable broth, two cups heavy cream, two cups shredded cheddar cheese,
a fourth of a teaspoon nutmeg and salt and pepper to taste. So let's get started.
The broccoli has already been rinsed clean so I'm first going to chop it up into florets.
Then I'll go back and chop it up even more. You don't want the broccoli to be too big it
should be bite-size and easily fit on the spoon when you're eating it.
Now in a large pot over medium-high heat we melt the butter then add in the chopped onions
and saute. When the onions start to get translucent add in the minced garlic
as well as the broccoli florets,
the vegetable or chicken broth and the grated carrots. Let it come to a boil and stir occasionally
until the broccoli becomes tender. At first it's going to look like there's not enough liquid but
once the broccoli starts to cook down it'll be just right. This should take about 10 minutes or so.
You can see that there's plenty of liquid in the pot now now that the broccoli has cooked down.
So what I'll do is I'll take a toothpick and I'll just poke it through to see if the broccoli is
cooked tender and if it can easily go through then you're ready for the next step which is
to pour in the heavy cream and then we lower the temperature.
Next we add in the shredded cheddar cheese a little at a time and let it all melt into the soup.
So finally we season with salt pepper and nutmeg.
Give everything a good mix and let the soup simmer gently a few minutes more.
This broccoli cheddar soup is done. It looks amazing. I'm going to serve myself a bowl and
toast up a slice of my homemade sourdough bread to go with it and then we'll give it a taste.
All right I'm going to sprinkle some of this extra cheddar cheese on top
and some crushed black pepper and I'll dig in.
I love a good soup and this one is just rich and creamy and cheesy deliciousness
and with the broccoli in there it's loaded with nutrients that are also good for you.
It's just one of those soups that you want to cozy up to at the end of a long day and it'll
just make everything feel better. I hope you try this. Thanks so much for checking out this video.
