Crispy beer-battered onion rings,
and I need to start on this dipping sauce.
Some mayo, and we're gonna hit some sour cream in it,
and some sun-dried tomatoes, roasted pepper,
little bit of garlic, fresh cracked black pepper,
let me find some lime, roll that out,
get the juice out of it, and just a touch of this,
like the acidity of this, Sonoma County white wine,
and we hit it.
Okay, now, I want this to set up
in the fridge a little bit,
so what I'll do is take it and cover it.
Okay, this goes down for about an hour,
over to these onion rings,
and I'm gonna add the buttermilk into here.
Yellow, white onion, something that's really fresh,
about half an inch.
We start unfolding it, but now look at these pieces
that we start getting into.
That's what I'm looking for right there.
I got a bunch of onion rings to break down,
pop them into the milk, mix it up in this buttermilk.
Now, I'm gonna cover this,
and let it sit in the fridge.
Now, this can stay in the fridge for, you know,
an hour, hour and a half.
Let's go get these onion rings,
and we'll get a little bit of flour into this.
Medium-bodied beer, about like tempura batter, okay?
Now, we get a little flour to do the dredging,
about a teaspoon of granulated garlic,
kosher salt, a little pepper, mix that together.
Okay, now, my cauldron of oil is about 350.
What I'm gonna do is come out of the buttermilk,
drop it into the flour.
Now, with my dry hand, cover the onion,
then drop it into the mix,
and then with my wet hand,
come back in here and see if it's ready.
And that looks like a pretty good mix.
Watch yourself when going down.
Looks good, let's hit them.
All right, these are done and ready to go.
Nice and golden brown.
Last of the rings are done,
and stack those, oh, those look fantastic.
We'll serve some of that up, a couple rings.
Let me dip one of these.
Mm, beer-battered onion rings with this dip, out of bounds.
