Hey guys, Dave here.
Today we're doing up another one of our famous 30-minute dinners, Sweet Chili Thai Style
Chicken.
It's not really authentic Thai, but there's a good hint there.
So let's walk you through the recipe.
So what I have here is half a cup of sweet chili sauce, and you can pick this up in just
about any store, or if you're really energetic, you can make it from scratch.
We have a great recipe for this, so I'll put the link below.
So we're going to add two tablespoons of soy sauce to the chili sauce, a teaspoon of sriracha,
and if you don't have sriracha, you can use, I guess, hot pepper flakes, even some Tabasco.
I just like that word, sriracha.
Give it a good mix here.
And you know, it's kind of funny, I can actually smell those flavors coming together.
Okay we'll just set this aside.
Okay, now we're going to work on the chicken.
I'm using boneless, skinless chicken breasts here, just because I kind of find them healthier
and easy to work with, but you know, you can use any cut of chicken for that matter.
And you want them in just kind of bite-sized chunks, something like this.
What we're going to do now is add some oil to a pan, and I've got this fired up about,
oh, let's say medium-high heat.
Add the chicken in, and give it a dusting of pepper.
I'm not going to use any salt here, because we're using soy sauce, and you're going to
get enough sodium in that.
I'm going to add a nice, generous amount of pepper here, I'm kind of a pepper lover.
Okay, and we're just going to stir this around, and fry it for about four minutes or so, just
until it's browned.
Okay, we've gone up, oh, I'd say about five minutes here, and this chicken has browned
up really nicely.
So we're going to go ahead and add in, oh, I'd say about half a chopped onion, three
cloves of chopped garlic, and one of my all-time favorite spices, ginger.
I just love ginger.
So I'm going to give this a toss, just until those spices become, you know, kind of aromatic,
just fill the air, and there's nothing nicer than these spices, you know, just filling
the air in the house.
Mm-mm, this smells good.
If it gets a little too dry, I mean, your pan, just go ahead and add in a bit more oil.
After the spices are fragrant, I'm just going to lower the heat here a little bit, grab
up my yummy sauce, and add it in.
Of course, take your two spoons again, and give it a nice toss.
Mm, does this ever smell good.
Just look at that sauce covering the chicken.
So what we're going to do is just let this simmer, I'd say for about three minutes or
so, just until it thickens up a little bit.
After about three minutes, kill the heat, and there you have it, our sweet chili Thai-style
chicken.
Mm, this is going to be good.
Plate this up.
Mm, look at those juices.
Garnish it up with some freshly chopped cilantro.
Boy, the green just makes the dish, doesn't it?
A squeeze of fresh lime, and we're ready to dig in.
Well, guys, we've met two of the three markers.
It looks and smells so delicious.
Now let's taste it.
Mm, this is so good.
It's got a sweetness, the spices come together nicely, that kick from the sriracha, mm, very
Thai-style.
I love this.
I'm going to eat more of it.
And the good thing is, it's dinner in 30 minutes.
