These light crispy pastries, filled with gently spiced dates and currants, are unusual for their use of cream in the pastry dough. Mine are a hand-sized version of what may have been larger affairs in medieval tables.
Payn Puff got the royal thumbs up from King Richard II, it would seem, as it is on record that he was served the dish at two separate feasts, and his master cooks also included the recipe in the king's cookery treatise, Fourme of Cury.
