Turkey meatloaf with feta and sun-dried tomatoes.
Who knew that meatloaf could be so exotic?
Let's get started on the turkey meatloaf.
We're going to grab some turkey, some sun-dried tomatoes, feta,
and milk.
All right, the turkey we're going to use in a minute.
Grab a bowl, and let's start.
We're going to start with two eggs.
This is the base for the turkey.
You need to add some moisture to the turkey meatloaf,
because turkey has less fat than other meats.
So you want to add two eggs to kind of give it its texture,
but also to create some moisture.
Next, some milk.
So between the eggs and the milk,
that's how you keep the moisture in the turkey.
So two tablespoons of whole milk, right in there.
Nice and rich, and really, really good.
Then, for some green and some fresh flavor, parsley.
Next, we're going for the cheese.
I'm only going to use half a cup.
I'm going to use this.
The rest I'm going to save and eat it later.
Now, feta cheese is salted and cured,
which gives it kind of a tangy, salty flavor to it.
And then what I like to do is cut it in cubes.
And then we're going to add the cubes into the turkey meatloaf.
There we go.
Nice and salty.
So good.
Then, sun-dried tomatoes.
They're rich, and they're sweet, and they
add so much flavor and texture inside of the turkey meatloaf.
And a quarter cup is all we need.
All right.
So let's add the sun-dried tomatoes right in there.
We are also going to add a little salt and a little pepper.
And a little pepper.
And we need half a cup of breadcrumbs.
The breadcrumbs give the meatloaf texture.
It kind of holds it together.
Plain breadcrumbs.
We've got enough flavors going on in here,
we're just going to use the plain breadcrumbs.
And now, we're going to mix all of this together,
and then add the ground turkey.
And I like to use dark meat turkey,
just because it has a little bit more flavor.
Mix it all together.
Kind of break it up a little bit with a spoon.
So good.
OK.
So now that that's all mixed together,
let's grab the baking sheet.
So I have a nonstick loaf pan that I've actually
sprayed with cooking spray, just to make double sure
that the meatloaf comes out easily.
Come on.
I get it all in there.
And just spread it out with a spoon.
Get a nice, even layer.
There we go.
And now, we're going to bake it at 375 degrees for 45 minutes.
