Hello everyone! Welcome back here in Manila, London.
Today we are going to make sinigang, salmon for Steve. We'll see if he's gonna like this.
This is a Filipino dish. So in the Philippines, we have loads of fish,
first from the river or from the sea. And we always make like salmon or any fish that we have
available where we are. Now we have salmon here. You can't buy any fish in the UK. Only salmon
from... I think the salmon is from Scotland. So by the way, I'm going to use a salad master.
We have chicken as well. By the way, we're gonna have chicken just in case he doesn't like
my rice cooker. It's making noise. So I'm making rice as well in the rice cooker here. And this
one, this is chicken. Chicken thigh that we're gonna make. And I have salmon. Okay, let's turn
on. Select temperature. Apologize with my rice cooker here. So what we're gonna do first,
underneath. We have onion.
Tomatoes.
And then we have some ginger here. And some salt.
Don't worry about if there is no juice. Lemon, onion, and tomatoes is going to produce
juice in here. So next thing we're gonna do is our chicken.
Yeah, so this is a chicken thigh. As you can see, maybe this is nine pieces
of chicken. Yeah, so you don't need to put salt in here. Just a paprika.
We just pour some paprika here. Be generous to our paprika. Yeah, we will make sure that it's
going to be coated. All of our chicken. It's just mix all of them. Make sure they're all coated with
our paprika. I'm gonna add mine as well. Now I am preheating my salad master.
We will test our salad master. So let's drop some water. If you saw that it's bubbling like that,
that means it's ready to use. You know. So our water is bubbling. It's not sticky.
Now we are going to cover a little bit. Salad master is calling us.
I'm going to add Sinigang sa Sampalok. That is tamarind.
Let's check. Yeah. Oh, see. Very low heat.
Nice cooked. Nicely cooked.
Let's go back to our Sinigang. I'm adding fish sauce. And also we're gonna add non-spicy green
chilies. I bought that from shop. And also red chili. That is my harvest from last year. It's
dried. Now we are going to boil our beans. Of course, harvest from the garden.
We're just gonna blanch it a little bit. And also our Pechay or Pakchoy.
Looks so fresh. Five minutes from the garden. We're just going to blanch them.
Voila. Looks so delicious and crunchy. Our Sinigang is cooked. Let's add on top.
Chicken as well is ready. We are plating now and ready to serve. Hopefully, Steve will like this.
Let's serve on the table.
Our Sinigang. Let's dish up. This is my dish plate.
I think we bought it from our holiday in seaside somewhere in Cornwall.
Our rice is ready too. Rice is life. So Steve is going to eat rice tonight. He don't eat a lot of
but I do and Lexper. Sometimes. Sometimes we don't eat and maybe three to four days in a week.
Stephen, help and me in here.
My rice, chicken, vegetables, Sinigang.
What's that on your top?
It's a leaf.
Let's eat.
It's food time.
I got some rice. I cooked chicken for Steve as well and Sinigang. He's gonna try the Sinigang.
We got chicken.
Second chicken.
Where's Lexper?
Gonna take some Sinigang.
You don't have serving spoon.
So Sinigang is very sweet and very bitter at the same time.
And sour.
Yeah, sour.
So you want some Sabao?
No, I'm okay.
You sure?
I made choy from the garden.
For Lexper.
I cooked rice as well.
Stephen is eating.
Maybe he's eating fast.
Maybe he's really hungry.
And vegetables.
How's the chicken?
Not even tried?
So we have some pet choy.
As you can see.
No oil, no salt on the chicken.
Chicken is good.
Let's try the chili.
And the fish.
We are very rare
to eat fish in this house.
So tomorrow
we're gonna have a visitor.
A chef.
From Qi restaurant.
We made good friends with the manager of Qi.
Jason.
And the manager is coming with the boss.
After they're gone.
Yeah, got a little bit drunk at a party with Jason.
Turned into a friend.
Look, Steve nearly finished his salmon.
Very soft.
Next time, I'm gonna cook what salad master did
with the soy sauce and oyster.
This is nice.
I think Steve needs to
get used to it.
The taste of
Filipino food.
Yeah.
Tomorrow, Sinigang again.
Is it? I thought you said spring roll.
No, Ate Marge.
Ate Marge is going to bring Sinigang.
Salmon.
But head.
Head.
Salmon head.
One of my favorite dishes
that I had when I was in the Philippines
was grilled tuna.
That was really nice.
Made by
a personal chef.
He has a personal chef in his house.
My goodness.
He runs a local lottery out there in the Philippines.
He's just very well known.
He has armed guards.
Very cool guy.
Nice.
Chicken's got a subtle bit
of spice to it.
It's not in your face type spice.
It's just a little teeny tiny bit.
I only want to put
one ingredient in there.
No pepper, no salt.
Is it Cajun?
Paprika.
Chicken.
Right, so you had all your salmon.
How would you rate my
Sinigang
Nesda?
Filipino dish?
About 9.
I think it's nice to have some sour sometimes.
What happened?
Hot bone.
From the fish?
From the chicken?
Chicken.
You got a bone in there?
On the side?
What about the chicken?
How much would you rate?
10 out of 10?
I give it
probably
a 7.
Why?
It's a little bit dry.
They didn't put oil, that's why.
The paprika, although it's nice,
I prefer some of the other chickens
that you've done in the past.
This is a good experiment.
What kind of chicken? Fried chicken?
When you tried to do KFC chicken.
KFC or Jollibee?
Yeah.
You're going to make that next time then.
I like this more than your lemon chicken
that you did the other week.
That one was a little bit sweet.
This one's nice.
And guys,
the greatness is the
9 out of 10,
the Sinigang.
7 out of 10, the chicken.
Anyway, it's fine.
Annie's opinion.
At least you got 9 in this Sinigang.
This is more important.
Sinigang.
All the green vegetables here
from the garden.
You got 2 10s the other day.
Les doesn't like this.
Les doesn't like salmon.
Very good.
Finished.
We will continue eating.
Thank you for watching.
Thank you for watching people.
See you next time.
Bye.
Maybe we didn't do thumbnail.
You do like this.
Then I can...
I'll put fish in there.
Then me like this.
One more.
You could put some salmon on your plate.
I have picture of that.
Finished.
