When you're craving a more substantial hot meal,
this chicken stew is a perfect fix.
It's super easy to make, and it's loaded with vegetables,
so I don't feel weighted down after enjoying a bowl.
Check it out.
Now, when I cook a stew and things like that,
I like to have all my ingredients pre-chopped.
This is also a great way to meal prep your weekly meals
by chopping up everything, putting it in zip bags
or airtight containers, and then when it's time
to make the meal, like on the middle of the week
on Wednesday, your stuff is prepped.
Cuts down like 15, 20 minutes for sure.
So for this chicken stew, I'm just gonna chop up
some golden potatoes.
I washed them, I didn't peel them,
but you can peel them if you want.
Next up, my carrots.
In this large pot, I'm heating some olive oil
over medium-high heat.
Next, I'm going to add some chicken pieces
and cook them until they're golden brown
for about four minutes.
The chicken looks about done, so let's remove it
from the pot with a slotted spoon and set aside for later.
I do wanna leave some of the fat and the juices in there
so I can brown my onions and carrots and celery.
All those flavors go right into my veggies.
I'm gonna add a little more oil to the pot
and then in goes in the onions, carrots, celery,
and we're gonna saute these until the veggies
are softened and golden brown.
The veggies add so much flavor to the stew
and it already smells incredible.
Now the onions are golden brown,
we're gonna introduce our seasoning
with some thyme, rosemary, bay leaves, salt,
and a little black pepper.
The potatoes, the chicken pieces, and the chicken broth,
it all goes in there.
We're gonna give it a stir and bring it to a boil
before we reduce the heat
and we simmer it for 20 to 30 minutes.
Ooh, look at that.
So next, what we're gonna do
is add about a cup of frozen peas.
If you don't have frozen, you can use canned peas as well.
Now you could totally serve this chicken stew as is,
but I really like my stews to be thick
and have a little bit of creaminess to them,
so I'm just adding some half and half into the stew.
Now that I've stirred in the cream,
I'm just gonna let this simmer
for another five minutes or so while I go get some bowls.
All right, so let's give this a try.
It's really hearty and it's got all the flavor
from the chicken in there.
I know that leftovers are gonna taste
even better the next day.
