Here's a great grilling tip from Bobby Flay.
What could be better than lobster on the grill?
I just love the rich, creamy flavor.
However, there is a trick to making it perfect.
So I have a cooked lobster here.
I put this in some boiling water for about 10 to 12 minutes.
And this lobster is about two pounds.
We actually cook the lobster about 3 quarters of the way,
either by steaming or by boiling.
And what that does is it gives the meat inside
a really rich, creamy texture.
So now we're going to take our lobster.
We're going to cut it in half.
When the lobster meat is cooked, just before it's
cooked all the way through, we take it out of the boiling water
and we let it cool.
And just brush with a little light oil, like canola
or something along those lines.
Nice hot grill.
And we put it on the flesh side down.
And one of the things I love about grilled lobster
is smelling the aroma of the shells on the grill.
I mean, it just makes it so, so enticing.
Now we let the lobster grill.
We're going to make a condiment to go with it.
The most classic condiment with lobster is butter.
But we're going to make a compound butter
with unsalted whole butter and some fresh basil.
It's fantastic, especially in the warmer months.
So just some fresh basil leaves.
And put a lot of basil leaves in there
because we want a lot of basil flavor.
Some salt and pepper in a food processor.
Let's check our lobster.
Look at that.
Wow, they look great.
All right, see how quick that was?
Just some basil, some butter, some salt and pepper.
OK, let's put some basil butter on these lobsters.
And you see, at this point, I mean, they cook very quickly.
I mean, so basically, a good tip would
be to parboil your lobsters before your guests get there.
And then as soon as everybody gets there,
fire up the grill and throw them on the grill.
And you just slather them with lots of basil butter.
And of course, don't forget your garnish.
Now that's what I call lobster on the grill right there.
