Hello everyone out there, how's it going?
Welcome back to my channel.
Today's video is very exciting
because today we are making a rainbow salad,
which is the most exciting kind of salad
that you could ever make because it's a rainbow salad.
This recipe is obviously great any time of year,
especially in like the summer,
but if you bring this to your next holiday party
or any kind of party for that matter, an event,
you're gonna wow people because it is so beautiful
the way that it is laid out.
Full recipe details, all the measurements
can be found on my blog, so I will leave a link to it below
and let's get started.
So let's talk about the ingredients that you'll need
for this rainbow salad, starting with beets,
which are fantastic for liver health,
for liver detoxification.
Next up we have carrots,
which are a wonderful source of beta carotene,
which is really good for our vision and our eyes.
Lemon is actually what we're gonna be using
for part of our salad dressing,
but really good for digestion.
Next up we have chickpeas,
which are a really good source of plant-based protein
and prebiotic fibers that are good
for feeding the bacteria in our gut.
And kale, of course, really good source of minerals.
So when you think of leafy greens,
think of calcium and magnesium, really good for our bones.
Pumpkin seeds are the other green food that we have here
that are a wonderful source of zinc,
which is actually very, very good for our immune system.
And we've got our blueberries, of course,
which are a fantastic source of antioxidants.
I love, love, love blueberries.
Really good for protecting our cells against damage.
And then our purple cabbage,
which is fantastic for being a source of vitamin A,
vitamin C especially.
Cabbage is pretty inexpensive,
adds a nice crunch to the salad.
So we're gonna begin by prepping our kale.
You've probably seen me do this in other videos
where you just wanna pull the leaves off of the tough stems.
That way we are avoiding too much
of that toughness in the salad.
And then you can roughly chop the kale leaves.
You can do this as thinly as you like.
And then we're gonna add it to a bowl
and we're gonna massage it with olive oil.
And the reason why you do this is because it helps
to soften the tough fibers in the kale.
So it makes it a little bit more palatable.
So it doesn't taste so much like tree bark.
So you just wanna really give it a good massage
for just a couple of moments till it's softened up.
And then you'll notice that it'll look kind of,
it'll almost look like it's been steamed a little bit.
So that's kind of what you want.
And then you can just throw that into your bowl
and we can get started with adding
in the rest of our rainbow ingredients.
So next up we wanna grate our beet.
And look at how beautiful and red it is.
So you just, I'm using a cheese grater,
just grate it up and then place that to one side.
Next we're gonna grate our carrots.
Same idea, I'm just using a cheese grater here.
And you can use probably about one medium sized carrot
or if you have two small carrots, that should do.
And then add that to the next little strip here
on top of the salad.
And next we're gonna add our chickpeas,
our pumpkin seeds, blueberries, and purple cabbage.
You definitely don't need to use the entire cabbage.
Just maybe like, you know,
kind of one small portion of the cabbage will do.
Maybe about a cup or so.
And then once everything is laid out like a rainbow,
that's it, you've got your beautiful rainbow salad.
But lastly, we wanna get started on the salad dressing.
So you'll need some olive oil, some lemon,
some maple syrup, some dried garlic,
and a couple dried herbs like basil, parsley,
and oregano, and some salt and pepper.
And just give that a really good whisk
till it's well combined and nice and creamy.
And drizzle that on your salad.
You can toss the salad together
or you can serve it as a rainbow.
It's totally up to you.
This serves about four people.
And if you do have any leftovers,
you can definitely store it in the fridge
for a couple of days.
Kale is pretty hearty and holds up pretty well.
But that is it, a deliciously colorful rainbow salad.
I hope you give this recipe a try.
