You guys, welcome back. I spent a day at a cozy getaway cabin and prepared pork skewers and a
refreshing spicy salad to go with it. A classic meal when out in nature. First, soak bamboo skewers
in water overnight. This will reduce its chances of burning when it's grilled. Let's prepare the
Smash up some garlic, cilantro roots, or the lower portions of the stem that bunch up like this will
do. I've chopped them up so they're more manageable. And black pepper, coriander powder,
palm sugar, white sugar, oyster sauce, golden mountain seasoning sauce,
thin soy sauce, Thai black soy sauce, the sweet kind that is not salty.
In goes the coconut milk.
Mix well.
Vegetable oil and cornstarch, which will help to lock in the juices of the meat.
Everyone makes this marinade a bit differently, but this is how I like it.
Feel free to taste and adjust to your liking.
Choose your favorite cut of fatty pork. I'm using pork belly. Cut into about this size and thickness.
Add the meat into a Ziploc bag, followed by the marinade. Mix well and marinate in the fridge
Use your favorite crunchy fruits and vegetables. I'm starting with shards of cucumber.
The dressing is made to taste, but should be spicy, umami, and sour. Dry chilies,
sugar to balance, shrimp paste, seasoned unfiltered fish sauce called Pla Ra or
Padak. I have a video on how to make this, but feel free to use your favorite brand.
Fish sauce for a more complex salty umami flavor. A few Thai eggplants,
about three to four pieces per skewer. Let's grill them up. If you're using a conventional
grill, heat it up to 400 degrees Fahrenheit. Oil the surface with a bit of cooking spray to
prevent sticking. Halfway through, brush on coconut milk to both sides as much as you like.
This will add a nice aroma to the skewers. These skewers taste the best when they're piping hot
right off the grill. When they're hot, the flavors and aroma are enhanced and the meat is juicy.
There's no other classic combo quite like grilled meats, spicy salad, and sticky rice when you're
out in nature. This traditional meal is meant to be eaten with your hands, so with clean hands,
enjoy! The pork is aromatic and savory. The spicy salad is refreshing and vibrant and pairs so well
with the sticky rice. I hope you enjoyed this video. Please hit that like button and I'll see
you all in the next video. Be safe, everyone.
