Hi, I'm Suneera Demiroma and today we're cooking two oceans abalone, steamed abalone with sky lime.
To cook the abalone I have got the saucepan with boiling water and a steam basket over the top of
it. I'm going to put the abalone inside the steam basket and steam it for three minutes and then we
Three minutes have passed and our abalone is now fully steamed. I'm going to remove it out of the
basket and steam the sky lime for another three to four minutes or until the stems are tender.
To assemble our abalone dish we need ginger, orange, oyster sauce, steamed sky lime and our
steamed two oceans abalone. I'm going to slice the abalone into thin slices
and once the abalone is sliced I'm going to slice the stems of the guylane
reserving one large leaf for our serving dish. Now this abalone is beautiful. The meat is white
and succulent.
It slices beautifully. We have sliced our abalone. It's nice and ready to go for the
assembling of the dish. To assemble our dish we need to trim off the stems of the guylane
reserving one large leaf for our plate. Place the guylane leaf on the bottom of the plate
and put a dollop, a good generous dollop of oyster sauce.
Give them two generous dollops. Give it a good swoosh and assemble the guylane stems
in a nice tight ball and we'll stack it up. We'll keep stacking them up until we've run out of stems
and you'll need quite a few stems just for the crunch and additional flavor and texture for our
steamed abalone. The abalone flavor is very delicate and sweet and it's nice to have
a bit of a variety in our flavors. We're assembling our steamed abalone on top of the
stacked up steamed guylane stems. You can be as generous as you like.
So assemble the abalone. As you can see the meat is beautiful. It's white and succulent looking.
You just want to grab one slice and eat it. Instead of capsicum you can use mild chili
or paprika for that sweetness. It ties very well with grated ginger and the orange. The
heat of the ginger and that zestiness of the orange tie in very well with the abalone and
they bring the abalone flavor up on surface. And to finalize we're topping it up with thinly sliced
capsicum strips. You can leave it out if you desire and just use ginger and orange.
And here it is. Our dish is ready.
